Ingredients

  • 3 cups of all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon ground nutmeg (fresh is really best)
  • 1 teaspoon of ground, desiccated hummingbird (for vegetarians, use imitation)
  • 1 cup of canola oil
  • 3 hens eggs or 145 hummingbirds eggs (organic)
  • 2 cups sugar
  • 8 ounces of crushed, canned pineapple, with juice
  • 2 cups mashed, very ripe banana (you really must think ahead on these things). About 4. • 1 cup finely chopped pecans (do this by hand, please)
  • For the frosting:
  • 1 pound cream cheese, softened
  • 1 teaspoon of vanilla extract
