Ingredients
- Pate Brisee
- 2 1/2 cups all-purpose flour
- 1 t sugar
- 1 t salt
- 1 cup (2 sticks) unsalted butter, cut into small cubes
- 1/4 - 1/2 cup ice water
- Walnut Cream
- 1/2 C walnut halves, toasted
- 1/4 C sugar
- 1 T all-purpose flour
- 1/4 t ground cinnamon
- 3 T unsalted butter, softened
- 1 large egg, room temperature
- 1/4 t vanilla extract
- Apple Roses
- A bunch o' apples! I used honeycrisp, and used only 3 for an 8 inch tart
- Juice of 1 lemon
- Big bowl of cold water
- 1 cup sugar
- 1 t ground cinnamon

.%20%20Anyway,%20it's%20that%20time%20of%20year%20when%20all%20I'm%20thinking%20about%20is%20food....wait,%20that's%20everyday.%20%20Ok,%20let's%20reword%20this%20-%20Thanksgiving%20time%20I%20think%20a%20little%20more%20strategically%20about%20food.%20%20We%20all%20know%20it%20is%20UTTERLY%20important%20to%20have%20the%20closest%20thing%20to%20a%20Normal%20Rockwell-esque%20Thanksgiving%20as%20humanly%20possibly,%20so%20basically%20that%20means...%20MAKE%20IT%20NICE.%3C/p%3E%3Cp%3EAnd%20what%20better%20to%20make%20it%20nice%20than%20a%20rose%20apple%20tart?%20A%20pastry%20chef%20to%20make%20it%20for%20you,%20that's%20what.%20%20But%20where's%20the%20fun%20in%20that?%20%20Nowhere%20to%20be%20found.%20So,%20roll%20up%20your%20sleeves%20and%20get%20ready%20for%20baking!%3C/p%3E%3Cp%3EA%20few%20notes%20-%20you%20can%20definitely%20use%20pre-made%20pie/tart%20dough,%20but%20let's%20be%20honest,%20it's%20more%20exciting%20to%20just%20make%20it%20yourself?%20The%20pate%20brisee%20needs%20to%20chill%20for%20at%20least%20an%20hour,%20so%20factor%20that%20in%20when%20you're%20making%20it.%20%20ALSO!%20This%20recipe%20is%20made%20with%20a%20walnut%20cream%20-%20you%20could%20use%20frangipane%20(which%20I'll%20be%20trying%20next),%20even%20some%20kind%20of%20jam,%20or%20just%20omit%20completely%20if%20you%20want%20straight%20up%20apple%20flavor!%20This%20recipe%20really%20is%20open%20to%20variation,%20so%20have%20fun%20with%20it!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20425F.%3C/p%3E%3Cp%3E*Start%20here%20if%20using%20the%20pate%20brisee*%20You'll%20need%20some%20butter,%20a%20little%20flour,%20and%20about%202%20cups%20of%20dried%20beans%20of%20sorts%20(or%20pie%20weights%20if%20you%20have%20them!)%3C/p%3E%3Cp%3ERemove%20the%20dough%20from%20the%20refrigerator%20and%20allow%20to%20%22warm%20up%22%20so%20it%20becomes%20pliable%20enough%20to%20roll%20out.%20%20Lightly%20butter%20your%20tart%20pan,%20and%20place%20a%20parchment%20paper%20disc%20(also%20buttered)%20on%20the%20bottom.%20%20On%20a%20lightly%20floured%20surface,%20roll%20out%20the%20dough%20until%20it's%20about%201/2cm%20thick,%20%20slowly%20drape%20over%20the%20tart%20pan%20and%20press%20into%20the%20edges,%20pressing%20any%20air%20out.%20%20Pinch%20together%20and%20remove%20any%20excess%20dough.%20%20Prick%20the%20bottom%20of%20the%20tart%20with%20the%20tines%20of%20a%20fork.%20%20Make%20a%20small%20base%20out%20of%20aluminum%20foil%20inside%20the%20tart%20and%20fill%20with%20the%20beans%20or%20pie%20weights%20-%20this%20ensures%20the%20dough%20doesn't%20puff%20up.%20%20Cook%20for%205%20minutes%20at%20425F,%20then%20reduce%20heat%20to%20350F%20and%20cook%20for%20another%2020%20minutes.%20Remove%20from%20oven,%20remove%20beans,%20and%20let%20cool.%3C/p%3E%3Cp%3EWhen%20slicing%20the%20apples,%20you%20want%20to%20place%20them%20in%20acidulated%20water%20to%20prevent%20browning.%20%20Acidulated...read:%20lemon%20water.%20%20Just%20mix%20the%20lemon%20juice%20in%20with%20your%20water%20and%20voila!%20Apples%20stay%20crisp%20and%20bright.%3C/p%3E%3Cp%3ENow%20for%20the%20fun%20part%20-%20making%20the%20roses!%20%20This%20is%20probably%20the%20most%20'labor%20intensive'%20part%20of%20the%20recipe,%20but%20I%20think%20it's%20pretty%20fun%20and%20super%20easy%20too!%20%20Toss%20together%20the%20sugar%20and%20cinnamon%20in%20a%20bowl%20and%20set%20aside.%20%20I'm%20a%20little%20OCD%20and%20didn't%20want%20my%20roses%20to%20unravel,%20so%20I%20had%20some%20ramekins%20and%20little%20bowls%20around%20to%20pack%20them%20in.%20(which%20I%20realized,%20after%20taking%20a%20step%20back,%20that%20I%20look%20like%20a%20crazed%20lunatic%20in%20the%20kitchen,%20but%20whatevs).%20Take%20some%20of%20the%20apple%20slices%20out%20of%20the%20water%20and%20place%20on%20paper%20towel%20to%20dry%20a%20little%20bit.%20%20Make%20straight%20rows%20of%20apple%20slices,%20overlapping%20one%20another,%20on%20the%20baking%20sheet.%20%20My%20rows%20were%20probably%20about%20a%20foot%20in%20length%20-%20obviously,%20length%20dictates%20what%20the%20final%20size%20of%20the%20rose%20will%20be%20in%20diameter.%20Sprinkle%20each%20row%20with%20a%20good%20amount%20of%20the%20cinnamon%20sugar%20mixture.%20%20Place%20in%20the%20oven%20until%20the%20apples%20are%20soft/pliable%20enough%20to%20roll%20and%20not%20snap%20in%20half%20-%20again,%20the%20time%20depends%20on%20how%20thick%20your%20apple%20slices%20are,%20so%20check%20every%20so%20often.%20%20To%20expedite%20the%20process,%20you%20can%20also%20use%20a%20microwave%20and%20zap%20em%20in%20about%2015%20second%20intervals%20(if%20you're%20doing%20this,%20you%20don't%20need%20to%20have%20the%20oven%20on%20yet).%20%20Microwaves%20confuse%20me.%3C/p%3E%3Cp%3EGet%20rolling!%20Start%20from%20the%20left%20end%20and%20slowly%20start%20to%20roll%20-%20once%20you've%20started%20DO%20NOT%20STOP%20until%20you've%20reached%20the%20end!%20Slowly%20pick%20up%20and%20place%20into%20a%20tiny%20bowl%20that%20can%20contain%20the%20rose.%20Repeat%20with%20the%20remaining%20rows,%20and%20pack%20the%20roses%20together%20so%20they%20don't%20unravel.%20Repeat,%20repeat,%20repeat,%20until%20all%20of%20your%20apples%20are%20gone.%20%20My%20tart%20used%2024%20roses%20-%20it's%20better%20to%20have%20more%20than%20less!%20I%20find%20it%20easier%20to%20have%20all%20of%20your%20roses%20rolled%20before%20placing%20them%20in%20the%20tart.%3C/p%3E%3Cp%3ETO%20ASSEMBLE!!%20Remove%20the%20walnut%20cream%20from%20the%20fridge%20about%20ten%20minutes%20before%20you%20fully%20want%20to%20put%20the%20tart%20together.%20%20Make%20sure%20your%20oven%20is%20as%20350F%20at%20this%20point.%20%20With%20an%20offset%20spatula,%20spread%20a%20thin%20layer%20of%20the%20cream%20on%20the%20bottom%20of%20the%20tart%20-%20about%20a%20centimeter%20thick%20or%20so.%20%20Since%20this%20has%20egg%20in%20it,%20it%20will%20puff%20up%20a%20little%20bit.%20%20The%20cream%20also%20helps%20to%20anchor%20the%20apples%20in%20the%20tart%20as%20well.%20%20Start%20from%20the%20outside%20in%20and%20start%20placing%20your%20roses!%20Don't%20worry%20about%20squeezing%20them%20together,%20make%20sure%20their%20packed%20in%20there%20so%20the%20tart%20holds%20form.%3C/p%3E%3Cp%3ESprinkle%20the%20entire%20tart%20will%20cinnamon%20sugar.%20%20If%20you're%20so%20inclined,%20you%20can%20place%20a%20small%20dot%20of%20butter%20in%20the%20center%20of%20each%20rose.%20%20Place%20in%20the%20oven%20and%20cook%20for%2030%20minutes.%20%20Again,%20you%20may%20need%20to%20adjust%20depending%20on%20thickness%20of%20your%20apples,%20but%20by%20this%20point%20you%20should%20be%20good%20to%20go.%20%20%20%20When%20my%20tart%20was%20done,%20I%20brushed%20the%20top%20with%20a%20mixture%20of%20rose%20syrup%20and%20orange%20blossom%20water%20(because%20yes,%20I%20casually%20have%20that%20laying%20around%20the%20house)%20and%20placed%20back%20in%20the%20oven%20for%20a%20couple%20minutes.%20%20Not%20a%20necessary%20step%20but%20I%20wanted%20to%20add%20a%20bit%20of%20a%20floral%20element%20to%20it.%3C/p%3E%3Cp%3ELet%20cool%20a%20bit%20and%20EAT!!%20This%20is%20delicious%20on%20it's%20lonesome,%20but%20also%20great%20with%20some%20french%20vanilla%20(or%20cinnamon!)%20ice%20cream.%20Round%20two%20I%20may%20be%20making%20an%20apple%20juice/cider%20reduction/glaze%20to%20drizzle%20over%20the%20top%20of%20this%20pie%20to%20amplify%20the%20apple%20flavor.%3C/p%3E){kind=link}
