Almond Fish Fingers Recipe

Ingredients

  • 1 1/2 lb white fish fillets, such as orange roughy or possibly halibut
  • 1/2 c. all-purpose flour Salt to taste Freshly-grnd black pepper to taste
  • 1 x egg
  • 1/4 c. lowfat milk
  • 1 c. whole blanched almonds finely minced
  • 2 quart vegetable oil - (or possibly more) for frying
  • 1/2 c. reduced-fat mayonnaise
  • 1/2 c. reduced-fat lowfat sour cream
  • 1/2 c. mixed minced fresh herbs (parsley, chives, tarragon, thyme, chervil)
  • 1 Tbsp. lemon juice Salt to taste Freshly-grnd black pepper to taste

Directions

  1. For the sauce, combine the mayonnaise, lowfat sour cream, herbs and lemon juice in a small bowl and stir to mix. Add in salt and pepper to taste, cover and chill till needed. (
  2. Makes about 1 1/2 c.)
  3. Cut the fish fillets crosswise into 1-inch strips. Put the flour on a plate with salt and pepper and stir to mix. In a shallow bowl, whisk the egg with the lowfat milk and a healthy pinch of salt. Put the grnd almonds in a third shallow dish.
  4. Heat about 2 inches of oil to 375 degrees in a deep-fryer. Dust the fish strips with the seasoned flour, turn to thoroughly coat and allow excess to drip off. Coat the fish with grnd almonds, shaking off excess, then put in the warm oil.
  5. Fry the fish strips, turning once or possibly twice as they cook, till golden, 2 to 4 min. Drain on paper towels and keep hot in a low oven while you fry the remainder.
  6. Arrange the fish fingers on small individual plates with small bowls of sauce alongside.
  7. This recipe yields 4 to 6 servings.
  8. Comments: Finely grnd nuts add in texture, flavor and crunch to fried fish. Hazelnuts can be used in place of the almonds if desired. A simple dipping sauce with lots of fresh herbs is perfect with this nutty fish, that makes an ideal first course.
