Ingredients

  • 3 med. cucumbers
  • 2 c. lowfat sour cream
  • 1 c. yogurt
  • 2 c. chicken broth or possibly stock
  • 4 cloves garlic, crushed
  • Juice of 1 1/2 lemons
  • 1/2 c. minced scallions, including tops
  • 4 med. tomatoes, minced
  • 1/4 c. parsley
  • Splash of vinegar
  • 1/2 c. vodka
  • Salt and pepper to taste

Directions

  1. Puree all cucumbers with a little of the lowfat sour cream and yogurt. Pour into big bowl and blend it well. Chop the remaining ingredients. Combine them with the liquid in the bowl, blending them with a whisk and adding the remaining lowfat sour cream and yogurt, vinegar and vodka. Refrigeratebefore serving. Serves 8-10.
