.%20But%20we%20don%E2%80%99t%20ALL%20have%20to%20post%20the%20same%20recipes%E2%80%A6%20do%20we?%3C/p%3E%3Cp%3ENobody%20else%20is%20posting%20vinegar%20poached%20anything%20right%20now.%20I%20cruised%20the%20blogs,%20just%20to%20see.%20Vinegar%20poached%20is%20not%20a%20trending%20topic.%20Still,%20lots%20of%20cultures%20cook%20food%20in%20vinegar.%20Spanish%20escabeshe%20and%20Filipino%20adobo%20come%20to%20mind.%20However%20I%20chose%20vinegar%20poached%20game%20hens%20for%20more%20than%20just%20shock%20value.%20I%20chose%20them%20in%20order%20to%20talk%20about%20poaching.%20How%20often%20do%20you%20poach%20anything%20other%20than%20an%20egg?%3C/p%3E%3Cp%3EPoaching%20is%20an%20often%20overlooked%20way%20of%20cooking%20delicate%20proteins%20like%20eggs%20(of%20course),%20fish%20and%20sometimes%20chicken.%20It%E2%80%99s%20accomplished%20by%20submerging%20said%20protein%20in%20a%20barely%20simmering%20liquid.%20Typically%20about%20160%20to%20180%20degrees%20is%20ideal,%20but%20you%20don%E2%80%99t%20really%20need%20a%20thermometer.%20It%E2%80%99s%20easy%20to%20teach%20yourself%20to%20recognize%20the%20right%20temperature.%20The%20surface%20of%20the%20liquid%20will%20shimmer,%20showing%20few%20if%20any%20bubbles.%20Turn%20the%20heat%20higher,%20about%20185%20degrees,%20and%20you%E2%80%99ll%20see%20a%20few%20gentle%20bubbles%20form%20around%20the%20edge%20of%20the%20pot.%20This%20is%20considered%20to%20be%20a%20full%20simmer%20(the%20heat%20level%20for%20braising%20sturdier%20cuts%20of%20meat).%20Crank%20the%20heat%20up%20even%20further%20to%20212%20degrees%20or%20so,%20and%20you%E2%80%99ve%20reached%20the%20boiling%20point.%20This%20is%20reserved%20for%20cooking%20pasta%20or%20blanching%20vegetables%20etc.%3C/p%3E%3Cp%3EToday%20however%20we%E2%80%99re%20vinegar%20poaching.%20I%20consider%20this%20preparation%20a%20particularly%20Italian%20way%20of%20dealing%20with%20these%20little%20birds.%20The%20best%20of%20Italian%20cooking%20embraces%20simplicity.%20Which%20means%20you%20should%20choose%20the%20best-quality%20ingredients%20you%20can%20find.%20These%20little%20birds%20will%20bring%20a%20great%20deal%20more%20flavor%20if%20you%20spend%20just%20a%20little%20bit%20more%20money%20for%20good,%20humanely%20raised%20hens.%20Once%20they%E2%80%99ve%20cooked,%20I%20have%20to%20encourage%20you%20to%20use%20the%20vinegar%20poached%20broth%20as%20the%20stock%20for%20a%20sour%20soup.%20I%20plan%20to.%20GREG%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ELeaving%20the%20skin%20intact%20trim%20the%20birds%20of%20any%20obvious%20fat.%20Season%20them%20generously%20on%20all%20sides%20with%20salt%20and%20pepper;%20inside%20and%20out.%20Tie%20the%20legs%20together%20with%20twine%20and%20tuck%20the%20wings%20under.%3C/p%3E%3Cp%3EHeat%20the%20olive%20oil%20in%20a%20Dutch%20oven%20just%20large%20enough%20to%20hold%20both%20birds.%20Add%20the%20carrot,%20onion%20and%20celery%20and%20cook,%20stirring%20occasionally%20until%20softened;%20about%206%20minutes.%20Season%20the%20mixture%20lightly%20and%20add%20the%20herbs,%20sugar%20and%20both%20vinegars.%20Bring%20the%20mixture%20to%20a%20boil%20then%20lower%20the%20heat%20and%20simmer%20about%205%20minutes.%3C/p%3E%3Cp%3EPlace%20the%20birds%20in%20the%20pot%20breast%20side%20up.%20Add%20enough%20water%20to%20barely%20cover%20them.%20Place%20the%20lid%20on%20the%20pot%20and%20simmer%20until%20cooked%20through;%20about%2025%20minutes.%20Turn%20off%20the%20heat%20and%20let%20the%20birds%20rest%20in%20the%20cooking%20liquid%20while%20you%20make%20the%20sauce.%3C/p%3E%3Cp%3EMeanwhile%20melt%20the%20butter%20in%20a%20small%20saucepan.%20Add%20the%20flour%20and%20cook,%20whisking%20for%201%20minute.%20Gradually%20stir%20in%20the%20chicken%20stock%20and%20simmer%20until%20smooth%20and%20thickened;%20about%203%20minutes.%20In%20small%20additions%20add%20up%20to%20about%20a%20%C2%BD%20cup%20of%20the%20poaching%20liquid%20from%20the%20Dutch%20oven.%20Add%20enough%20of%20the%20liquid%20to%20thin%20the%20sauce%20to%20your%20desired%20consistency;%20use%20your%20judgment.%20Increase%20the%20heat%20to%20a%20boil.%20The%20turn%20off%20the%20heat%20and%20season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3ERemove%20the%20chicken%20from%20the%20poaching%20liquid.%20Let%20them%20drain%20well%20on%20a%20rack%20and%20then%20move%20them%20to%20a%20warm%20serving%20platter.%20Spoon%20the%20sauce%20over%20the%20birds%20to%20glaze%20the%20skin.%20Garnish%20with%20more%20fresh%20herbs.%20Serve%20warm.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ENotes%3C/p%3E%3Cp%3ESave%20the%20poaching%20liquid%20as%20a%20soup%20stock.%20It%E2%80%99s%20particularly%20good%20in%20Chinese%20Hot%20and%20Sour%20soup.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
