,%20I%20went%20to%20work%20crafting%20a%20cake%20for%20MBF%E2%80%99s%2024th%20birthday%20bash.%20Goat%20butter%20is%20still%20in%20nonexistent%20supply,%20so%20I%20knew%20I%20had%20to%20go%20vegan%20for%20my%20cake%20base%20(plus%20eggs).%20Earth%20Balance%20buttercream%20is%20not%20too%20pleasant,%20leading%20me%20to%20try%20making%20coconut%20whipped%20cream%20for%20the%20first%20time.%20Topping%20the%20experiment%20off,%20I%20had%20never%20made%20an%20ice%20cream%20cake%20before!%3C/p%3E%3Cp%3EWith%20the%20photos%20as%20evidence,%20the%20cake%20turned%20out%20surprisingly%20well%20and%20was%20the%20delicious%20hit%20of%20the%20night!%3C/p%3E%3Cp%3EVanilla%20Bean%20Cake%3C/p%3E%3Cp%3EAdapted%20from:%20More%20from%20Magnolia%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20and%20grease/flour%20cake%20tins.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20sift%20together%20flour,%20baking%20powder%20and%20salt.%20%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20cream%20(preferably%20with%20an%20electric%20mixer)%20the%20Earth%20Balance%20until%20smooth%20and%20light%20yellow%20in%20color.%20%20Gradually%20beat%20in%20the%20sugar%20until%20fluffy,%20approximately%203%20minutes.%20%20Add%20in%20the%20eggs%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%3C/p%3E%3Cp%3EAdd%20the%20flour%20mixture%20in%20three%20parts,%20alternating%20with%20the%20milk%20and%20vanilla.%20%20This%20is%20key:%20after%20each%20addition,%20make%20sure%20to%20beat%20enough%20to%20incorporate%20the%20ingredients,%20but%20do%20not%20overbeat.%20%20(This%20will%20create%20gluten%20and%20you%20will%20have%20a%20rough%20and%20dry%20cake)%3C/p%3E%3Cp%3EFill%20the%20prepared%20cake%20tins.%3C/p%3E%3Cp%3EBake%20for%20about%2040%20minutes,%20or%20until%20a%20cake%20tester%20is%20inserted%20into%20the%20center%20of%20the%20cake%20and%20comes%20out%20clean.%3C/p%3E%3Cp%3EVanilla%20Bean%20Cookies%20&%20Cream%20Ice%20Cream%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E2%20(14%20oz)%20cans%20full-fat%20coconut%20milk%3C/p%3E%3Cp%3E1/2%20cup%20unrefined%20granulated%20sugar,%20such%20as%20evaporated%20cane%20juice%3C/p%3E%3Cp%3E1%20Tbsp%20vanilla%20bean%20paste%3C/p%3E%3Cp%3E20%20all-natural%20cream-filled%20chocolate%20sandwich%20cookies%20(I%20used%20Newman%E2%80%99s%20Own)%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ERefrigerate%20the%20cans%20of%20coconut%20milk%20for%201%20hour%20(no%20longer).%20Chilling%20the%20coconut%20milk%20will%20cause%20the%20coconut%20cream%20to%20rise%20to%20the%20top%20of%20the%20can%20and%20slightly%20solidify.%20Carefully%20scrape%20out%20the%20coconut%20cream%20and%20milk%20from%20both%20cans%20into%20a%20large%20mixing%20bowl.%20Add%20in%20the%20sugar%20and%20vanilla%20bean%20paste.%20Hand-whisk%20lightly%20to%20break%20up%20the%20solidified%20cream,%20and%20then%20whip%20with%20an%20electric%20mixer%20for%20about%2010-20%20seconds,%20or%20until%20smooth%20and%20thick%20-%20don%E2%80%99t%20whip%20for%20any%20longer%20than%20a%20minute.%3C/p%3E%3Cp%3EPour%20mixture%20into%20your%20ice%20cream%20machine%20and%20churn%20according%20to%20manufacturer's%20instructions,%20gradually%20adding%20in%20the%20chopped/crushed%20cookies%20during%20the%20last%205%20minutes.%3C/p%3E%3Cp%3ETransfer%20mixture%20to%20a%20freezer-safe%20air-tight%20container%20and%20freeze%20until%20desired%20consistency%20is%20reached%20(at%20least%20a%20few%20hours).%3C/p%3E%3Cp%3ECoconut%20Whipped%20Cream%3C/p%3E%3Cp%3EBuy%20a%20can%20of%20full%20fat%20coconut%20milk.%20Thai%20coconut%20milk%20is%20fattier%20and%20works%20the%20best.%3C/p%3E%3Cp%3EPlace%20it%20in%20the%20fridge%20overnight.%3C/p%3E%3Cp%3EOpen%20the%20can%20without%20shaking%20it%20or%20turning%20upside%20down.%3C/p%3E%3Cp%3ECarefully%20spoon%20out%20the%20top%20layer%20of%20opaque%20white%20stuff%20that%20has%20gathered%20at%20the%20top%20of%20the%20can.%20Spoon%20into%20a%20mixing%20bowl.%20You%20will%20be%20left%20with%20about%201/2%20cup%20of%20white%20syrup-y%20looking%20translucent%20liquid.%20Leave%20this%20in%20the%20can.%3C/p%3E%3Cp%3EAdd%202-3%20Tbsp%20of%20powdered%20confectioners%20sugar%20to%20the%20coconut%20cream.%3C/p%3E%3Cp%3EUsing%20an%20electric%20mixer,%20whip%20the%20coconut%20milk%20froth%20until%20creamy.%20Start%20on%20low%20and%20move%20to%20a%20higher%20speed,%20move%20the%20beater%20in%20an%20up%20and%20down%20motion%20to%20infuse%20the%20mixture%20with%20as%20much%20air%20as%20possible.%3C/p%3E%3Cp%3EUse%20to%20frost%20the%20cake!%3C/p%3E){kind=link}
