Ingredients
- 1 cup (2 sticks) unsalted butter
- 2 1/4 cups sugar
- 1 1/4 cups Dutch-process cocoa
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon vanilla extract
- 4 large eggs
- 1 1/2 cups all purpose flour
- 1 cup chocolate chips
- For the Ice Cream Layer:
- 1.5 quart of vanilla ice cream, softened
- 2 cups chopped Heath candy bars, divided
- Salted Caramel Sauce, for serving, if desired

%3C/p%3E%3Cp%3EToffee%20Ice%20Cream%20Brownie%20Bars%20are%20a%20MUST%20make%20this%20summer.%20And%20June%20is%20National%20Dairy%20Month%20which%20means%20you%20can%20eat%20ice%20cream%20all%20day,%20every%20day!%20I%20know%20I%20am%20going%20to%20get%20more%20than%20my%20fair%20share%20of%20dairy%20this%20month%20thanks%20to%20this%20decadent%20ice%20cream%20dessert!%20It%20is%20dangerous%20that%20I%20can%20keep%20a%20pan%20in%20my%20freezer%20at%20all%20times%20because%20every%20time%20I%20walk%20by%20I%20want%20to%20enjoy%20a%20little%E2%80%A6or%20a%20lot%20of%20dessert!%20I%20am%20living%20in%20the%20danger%20zone!%20You%20should%20too!%3C/p%3E%3Cp%3EToffee%20Ice%20Cream%20Brownie%20Bars%3C/p%3E%3Cp%3EYield:%20Serves%2016%3C/p%3E%3Cp%3EPrep%20Time:%202%20hours%2030%20minutes%20(includes%20freezing%20time)%3C/p%3E%3Cp%3ECook%20Time:%2030%20minutes%3C/p%3E%3Cp%3ETotal%20Time:%203%20hours%3C/p%3E%3Cp%3EFudgy%20brownies%20topped%20with%20toffee%20ice%20cream%20and%20frozen%20for%20an%20extra%20special%20dessert.%20This%20brownie%20ice%20cream%20cake%20is%20one%20of%20my%20all-time%20favorite%20desserts!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20brownies:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20350%C2%B0F.%20Grease%20a%209%E2%80%B3%20x%2013%E2%80%B3%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3E2.%20In%20a%20medium%20saucepan%20set%20over%20low%20heat,%20melt%20the%20butter,%20then%20add%20the%20sugar%20and%20stir%20to%20combine.%20Return%20the%20mixture%20to%20the%20heat,%20just%20until%20it%E2%80%99s%20hot,%20but%20not%20bubbling.%20The%20mixture%20will%20become%20shiny%20looking%20as%20you%20stir%20it.%3C/p%3E%3Cp%3E3.%20Transfer%20the%20sugar%20mixture%20to%20a%20medium-sized%20mixing%20bowl.%20Stir%20in%20the%20cocoa,%20baking%20powder,%20salt,%20and%20vanilla.%20Whisk%20in%20the%20eggs,%20stirring%20until%20smooth.%3C/p%3E%3Cp%3E4.%20Slowly%20add%20the%20flour%20and%20chocolate%20chips.%20Stir%20until%20smooth.%3C/p%3E%3Cp%3E5.%20Spoon%20the%20batter%20into%20prepared%20pan.%20Bake%20the%20brownies%20for%20about%2030%20minutes,%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20comes%20out%20clean,%20or%20with%20just%20a%20few%20moist%20crumbs%20clinging%20to%20it.%20The%20brownies%20should%20feel%20set%20on%20the%20edges,%20and%20the%20center%20should%20look%20very%20moist,%20but%20not%20uncooked.%20Remove%20them%20from%20the%20oven%20and%20cool%20completely.%3C/p%3E%3Cp%3E6.%20When%20the%20brownies%20are%20completely%20cool,%20put%20the%20softened%20ice%20cream%20into%20a%20medium%20bowl.%20Stir%20in%201%201/2%20cups%20chopped%20Heath%20candy%20bars.%20Evenly%20spread%20the%20ice%20cream%20over%20the%20cooled%20brownies.%20Garnish%20with%20the%20additional%20Heath%20candy%20bar%20chunks.%3C/p%3E%3Cp%3E7.%20Cover%20the%20ice%20cream%20brownie%20bars%20and%20place%20in%20the%20freezer.%20Freeze%20until%20ice%20cream%20hardens,%20at%20least%202%20hours.%20This%20dessert%20can%20be%20made%20in%20advance.%3C/p%3E%3Cp%3E8.%20When%20ready%20to%20serve,%20remove%20the%20pan%20from%20the%20freezer.%20Run%20a%20sharp%20knife%20under%20hot%20water%20and%20cut%20the%20bars%20into%20squares.%20The%20bars%20will%20be%20hard%20to%20cut%20so%20make%20sure%20you%20get%20the%20knife%20super%20hot%20in%20between%20each%20cut.%20Drizzle%20the%20bars%20with%20salted%20caramel%20sauce,%20if%20desired.%20Serve.%3C/p%3E%3Cp%3ENote-To%20soften%20the%20ice%20cream,%20let%20the%20ice%20cream%20out%20on%20a%20countertop%20for%2030%20minutes%20before%20using.%20You%20want%20it%20soft%20enough%20to%20spread%20over%20brownies%20but%20still%20slightly%20frozen.%20The%20brownies%20will%20be%20hard%20to%20eat%20with%20a%20fork%20if%20you%20eat%20them%20straight%20from%20the%20freezer.%20You%20can%20let%20them%20sit%20for%20a%20bit%20or%20you%20can%20pick%20them%20up%20and%20eat%20them.%20They%20are%20a%20little%20messy%20to%20eat,%20but%20I%20promise%20it%20is%20worth%20the%20mess!%3C/p%3E%3Cp%3EDisclosure:%20This%20post%20is%20in%20partnership%20with%20the%20Dairy%20Council%20of%20Utah,%20but%20all%20of%20our%20opinions%20are%20our%20own.%20%E2%80%9DFor%20more%20dairy%20&%20nutrition%20information%20visit:%20www.dairyutnv.com%20and%20to%20get%20to%20know%20more%20about%20your%20local%20dairy%20farmers%20visit%20www.thecowlocale.com.%E2%80%9D%3C/p%3E){kind=link}
