,%20and%20since%20it's%20a%20kitchen%20I'm%20very%20familiar%20with,%20I%20decided%20to%20make%20some%20crackers.%20%20To%20be%20specific%20Helen's%20Thyme%20Mini%20Crackers.%3C/p%3E%3Cp%3EI%20mixed%20up%20the%20dough%20at%20home%20and%20transported%20it%20and%20used%20the%20ovens%20there%20to%20bake%20it%20off.%3C/p%3E%3Cp%3EHere's%20the%20recipe.%20%20In%20grams%20and%20by%20measure%3C/p%3E%3Cp%3EAlso%20Helen%20used%20part%20plain%20flour%20and%20part%20whole%20meal%20(whole%20wheat)%20flour,%20but%20I%20choose%20to%20go%20with%20plain%20old%20bread%20flour.%3C/p%3E%3Cp%3EMix%20all%20the%20flour,%20salt%20and%20baking%20powder%20together%20in%20a%20stand%20mixer,%20using%20the%20dough%20hook.%20%20%20Add%20the%20water%20and%20oil%20gradually,%20letting%20the%20dough%20hook%20knead%20the%20dough.%20%20Continue%20to%20mix/knead%20for%20about%20another%207-8%20minutes%20until%20it%20comes%20together%20in%20a%20smooth%20ball.%20%20(you%20may%20need%20a%20touch%20more%20or%20less%20flour,%20depending%20on%20the%20humidity%20and%20the%20kind%20of%20flour%20you're%20using,%20I%20ended%20up%20adding%20another%2050%20grams%20of%20flour).%3C/p%3E%3Cp%3ETake%20out%20of%20bowl,%20cover%20with%20a%20piece%20of%20plastic%20wrap%20and%20let%20it%20rest%20for%20about%20an%20hour%20or%20so.%3C/p%3E%3Cp%3EDivide%20the%20dough%20into%20thirds%20and%20add%20a%20teaspoon%20of%20dried%20thyme%20to%20each%20one,%20or%20add%20a%20different%20flavour%20of%20herb%20to%20each%20ball.%20%20Knead%20the%20dried%20herb%20into%20the%20ball,%20just%20til%20combined.%3C/p%3E%3Cp%3ERoll%20out%20on%20a%20floured%20surface%20to%20a%205%20mm%20thickness,%20then%20using%20either%20a%20small%20round%20cutter%20or%20if%20you're%20like%20me%20and%20a%20little%20lazy,%20cut%20them%20into%20rounds%20or%20squares.%20%20Place%20on%20a%20parchment%20covered%20baking%20sheet%20and%20bake%20at%20170C%20for%20about%2015%20minutes,%20then%20increase%20the%20temp%20to%20190%20deg.C%20for%20another%202-3%20minutes%20to%20brown%20them%20a%20little.%3C/p%3E%3Cp%3EKeep%20a%20close%20eye%20on%20them%20though,%20cause%20they%20can%20go%20from%20browned%20a%20little%20to%20way%20too%20brown%20quite%20quickly.%3C/p%3E%3Cp%3EBecause%20of%20circumstances%20beyond%20my%20control,%20I%20mixed%20up%20the%20dough,%20and%20it%20ended%20up%20sitting%20more%20than%203%20hours%20before%20I%20could%20bake%20them.%20%20%20The%20flavour%20was%20good,%20and%20I%20tried%20some%20Rosemary%20along%20with%20the%20Thyme%20but%20I%20think%20I%20could%20have%20used%20a%20little%20more%20of%20each%20herb.%3C/p%3E%3Cp%3EI%20did%20end%20up%20serving%20them%20along%20with%20a%20nice%20piece%20of%20Brie%20at%20Tapas.%20%20%20They%20also%20tasted%20good%20with%20the%20Red%20Pepper%20Hummus%20I'd%20made.%20%20Nothing%20like%20a%20multi%20purpose%20cracker.%3C/p%3E%3Cp%3ETake%20a%20look%20at%20what%20our%20other%20great%20cooks/bakers/chefs%20made%20for%20this%20month's%20recipe%20reveal.%3C/p%3E){kind=link}
