Ingredients

  • 4 boneless, skinless chicken breast halves, fresh or frozen
  • 2 tsp. olive oil
  • 2 medium onions (for 1-1/2 cups chopped)
  • 2 tsp. minced garlic
  • 3 cans (14-1/2 oz.) chicken broth
  • 2 cans (14-1/2 oz.) Mexican-style stewed tomatoes
  • 1-1/2 cups frozen corn kernels
  • 1-1/2 cups black beans (1 can)
  • 1/2 tsp. ground cumin
  • juice of 1/2 of a lime
  • Toppings:
  • grated cheeses, sliced black olives, crushed tortilla chips, sour cream, chopped green onions, dice avocado, cilantro
