Ingredients

  • 1 c. Cleaned tamarind
  • 1/2 c. Dates deseeded
  • 1/4 c. Sugar
  • 2 c. Water
  • 1/2 tsp Red chilli pwdr
  • 1/2 x Crushed cumin seeds
  • 1 tsp Salt
  • 3/4 c. Jaggery

Directions

  1. Wash the tamarind clean.
  2. Place the tamarind, jaggery, sugar, dates and water in a deep boiling pan.
  3. Soak for a few min. Put to boil for about 7-8 min.
  4. Cold to room temperature. Blend in a mixie until smooth.
  5. Strain and transfer to the pan again. Boil until thick sufficient to coat the back of a spoon thinly.
  6. Add in the seasoning. Cold again. Store in clean airtight bottles and chill.
  7. Makes: 2 1/2 to 3 c..
  8. Making time: 20 min (excluding cooling time)
  9. Shelf life: 1 month (refrigerated)
