Taco Soup

This is a great cold weather soup that everyone loves. Doesn't have a lot of 'I don't like that' ingredients.

Cook up quick and very inexpensive !!

Ingredients

  • 2 lbs gr. Beef
  • 1 chopped onion ( med )
  • 2 pkgs. Taco Seasoning
  • 1 pkg. Hidden Valley Ranch dry Mix
  • 2 cans Pinto Beans
  • 1 can Ortega Green chilies chopped
  • 2 cans whole kernel corn
  • 3 cans diced tomatoes ( 1 can blended to puree’)
  • 3 cans of water

Directions

  1. Brown Gr. Beef , drain. Add chopped onion cook for 5 minutes then add taco seasoning, dry ranch, beans, corn , tomatoes, and water.
  2. Serve with Tortilla chips, grated cheddar cheese, sour cream on the side. People like to create their own combination of stuff. I sometimes serve with chopped green onions.
  3. When I serve it I usually tell my guest to crumble up their chips in the bottom and ladle the soup over them.. then add their condiments
