Ingredients

  • 2 tablespoons unsalted butter or olive oil, divided
  • 1 large sweet potato, diced (about 2 1/2 cups)
  • 1 small onion, chopped (about 1 cup)
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 3 cups chicken broth (substitute vegetable broth if you like)
  • 2 1/4 cups water, divided
  • 1 head of kale, chopped (about 6 cups)
  • 2 tablespoons fresh thyme leaves
