Ingredients
- 1tbsp oil
- 1 small onion, diced
- 100g asparagus, cut into ½cm slices
- 50g sugarsnap peas, cut into ½cm slices
- 4 cloves garlic, minced
- 100g mushrooms, cut into 1cm dice
- 125g cherry tomatoes, quartered
- 125g sweetcorn kernels
- For the sauce:
- 2tbsp butter
- 2tbsp plain flour
- 300ml milk
- ¼tsp ground nutmeg
- Salt
- Black pepper
- 50g cheddar cheese, grated
- To construct the lasagne:
- 150g no-boil lasagne sheets
- 100g mozzarella, grated (I actually used a mozzarella / cheddar mix)
- 1 large tomato, sliced
- Fresh parsley, chopped, to serve

0burning.%3C/p%3E%3Cp%3EOnce%20you%E2%80%99ve%20used%20up%20all%20of%20your%20vegetables%20and%20sauce,%20top%20the%20dish%20with%20the%20grated%20mozzarella%20and%20slices%20of%20tomato.%20Bake%20for%20around%2040%20minutes,%20or%20until%20the%20cheese%20is%20crispy%20and%20golden%20brown%20and%20the%20lasagne%20is%20tender.%20If%20the%20cheese%20is%20browning%20too%20quickly,%20just%20cover%20the%20dish%20loosely%20with%20foil%20and%20return%20to%20the%20oven%20until%20the%20pasta%20is%20cooked.%3C/p%3E%3Cp%3ELeave%20to%20stand%20for%205-10%20minutes%20before%20serving.%3C/p%3E%3Cp%3E3.2.2310%3C/p%3E%3Cp%3EStill%20not%20convinced%20by%20making%20a%20layered%20lasagne?%20Maybe%20you%20could%20try%20creamy%20aubergine%20lasagne%20rolls%20instead.%3C/p%3E){kind=link}
