Stuffed Italian Eggplant Recipe

  1. Slice eggplant in half lengthwise. Scoop out insides, leaving 1/2 inch thick shell. Saute/fry onions, garlic, and eggplant pulp in the extra virgin olive oil.
  2. Brown the grnd beef. Add in the tomatoes and sauteed vegetables to the browned meat and mix together. Simmer till tomatoes are broken up.
  3. Spoon the meat mix into the shells, dividing equally. Bake in a greased baking dish covered at 375 for 45 min or possibly till the eggplant is done. Sprinkle with mozzarella and bake uncovered till the cheese is melted and browned.
