Stir-Fried Beef with Snow Peas

This was an easy peasy recipe, as are most Asian recipes, the kicker is the ginger–oh how I love ginger in this recipe!!

Stir-Fried Beef with Snow Peas

INGREDIENTS:

In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch and ginger. Add sliced meat to bowl and toss . Set aside. Heat oil in a heavy skillet or wok over high heat. Add snow peas and stir for 45 seconds. Remove to a seperate plate. Set aside. Allow pan to get very hot again and add half the meat mixture, leaving most of the marinade in the bowl. Add the scallions. Spread out meat as you add it to pan, but do not stir for a good minute, to sear. Turn meat to the other side and cook for another minute or so. Remove to a clean plate. Repeat with other half of meat, allowing pan to get very hot again first. After turning, add the first plate of meat, the reserved marinade and the snow peas. Sitr over high heat for a minute, then turn off the heat. Mixture will thicken as it sits. Serve over rice.

* Cutting meat very thin is easiest if you freeze the meat for 20-30 minutes beforehand
