%20until%20the%20fish%20pieces%20are%203/4th%20done,%20just%20tossing%20both%20the%20sides%20of%20marinated%20fish%20for%20a%20minute%20on%20high%20flame%20will%20do.%20Once%20done%20remove%20from%20flame%20and%20set%20aside.%3C/p%3E%3Cp%3ENow%20take%20a%20pan%20/%20pot%20(use%20a%20wide%20mouthed%20pan%20or%20pot)%20add%20oil%20into%20it%20and%20after%20it%20heats%20up%20add%20mustard%20seeds,%20and%20let%20it%20splutter,%20then%20add%202%20spoons%20of%20curry%20leaves,%20fenugreek%20seeds,%20cumin%20seeds%20and%20saute%20for%20a%20few%20seconds%20(do%20not%20let%20it%20brown).%3C/p%3E%3Cp%3EAdd%20chopped%20onions,%20little%20salt%20and%20saute%20until%20it%20turns%20slightly%20brownish.%3C/p%3E%3Cp%3ENow%20add%20the%20slit%20green%20chillies%20and%20saute%20for%20a%20minute.%3C/p%3E%3Cp%3EAdd%20ginger%20garlic%20and%20small%20onion%20paste%20and%20saute%20until%20the%20raw%20smell%20leaves.%3C/p%3E%3Cp%3EThen%20add%20red%20chilli%20powder%20and%20coriander%20powder%20and%20saute%20well.%20Add%201/4%20cup%20of%20water%20and%20stir%20well,%20cook%20on%20low%20flame%20until%20the%20raw%20smell%20leaves%20and%20oil%20separates.%3C/p%3E%3Cp%3EThen%20add%20the%20tomato%20pieces%20and%20stir%20well%20cook%20for%202%20minutes%20on%20low%20flame.%3C/p%3E%3Cp%3ENow%20pour%20half%20of%20the%20tamarind%20water%20and%20stir%20well.%20Pour%20some%20extra%20water%20to%20adjust%20the%20gravy%20consistency,%20do%20%20not%20pour%20too%20much%20of%20water.%20Now%20check%20for%20tangy%20flavor%20and%20add%20the%20remaining%20tamarind%20water%20if%20you%20want%20more%20sour%20flavor.%20This%20is%20upto%20your%20choice.%3C/p%3E%3Cp%3ECheck%20for%20salt%20and%20add%20if%20necessary.%3C/p%3E%3Cp%3ECook%20the%20on%20high%20flame%20until%20it%20boils%20well.%20Then%20switch%20the%20flame%20to%20low%20mode%20and%20gently%20slide%20in%20the%20fried%20fish%20pieces%20along%20with%20the%20oil%20used%20to%20fry%20the%20fish%20pieces%20and%20close%20the%20pan%20/%20pot%20with%20a%20lid.%20Do%20not%20stir%20now.%20Cook%20for%20another%203%20or%205%20minutes.%3C/p%3E%3Cp%3EMeanwhile%20in%20another%20pan%20add%203%20spoons%20of%20oil%20and%20after%20it%20heats%20up%20add%20chopped%20shallots%20(5%20shallots)%20and%20%201%20spoon%20of%20curry%20leaves%20and%20saute%20well%20until%20the%20shallots%20turns%20brownish.%20Remove%20from%20flame.%3C/p%3E%3Cp%3ENow%20open%20the%20lid%20and%20pour%20the%20above%20tempering%20mixture%20when%20its%20still%20hot.%3C/p%3E%3Cp%3ERemove%20the%20curry%20from%20flame%20close%20with%20a%20lid%20and%20keep%20aside%20for%2030%20minutes%20before%20serving.%20You%20can%20serve%20immediately%20but%20the%20flavors%20gets%20well%20absorbed%20by%20the%20fish%20as%20time%20passes.%3C/p%3E%3Cp%3ETIP%201:%20The%20curry%20is%20spicy%20but%20you%20can%20adjust%20the%20spiciness%20according%20to%20your%20wish.%20You%20can%20avoid%20adding%20green%20chillies%20and%20reduce%20some%20red%20chilli%20powder%20in%20case%20you%20want%20it%20less%20spicy.%20But%20make%20it%20tangy%20enough%20if%20you%20are%20making%20it%20spicy,%20these%20two%20flavors%20complements%20each%20other%20well.%3C/p%3E%3Cp%3ETIP%202:%20Always%20see%20that%20the%20curry%20is%20thick%20enough%20before%20you%20add%20the%20fish%20pieces,%20if%20in%20case%20its%20watery%20cook%20until%20it%20thickens%20well.%20But%20if%20it%20does%20not%20still%20thicken%20add%20some%20coconut%20paste.%20So%20always%20take%20care%20to%20pour%20only%20little%20water%20while%20making%20the%20curry.%20Only%20after%20the%20curry%20thickens%20add%20the%20fish%20pieces.%20Never%20cook%20for%20more%20than%205%20minutes%20after%20adding%20the%20fish%20pieces%20if%20you%20do%20so%20it%20will%20make%20the%20fish%20pieces%20break%20and%20dissolve%20in%20the%20curry.%3C/p%3E%3Cp%3ETIP%203:%20You%20can%20use%20any%20other%20fish%20types%20also%20to%20make%20this%20curry.%20Indian%20oil%20sardines%20(Chalai%20/%20Mathi)%20and%20anchovies%20are%20other%20best%20choices%20for%20making%20this%20curry.%3C/p%3E%3Cp%3ETIP%204:%20Adding%20more%20onions%20gives%20a%20nice%20flavor%20and%20thickness%20to%20the%20curry%20so%20add%20more%20onions%20to%20the%20curry.%20If%20possible%20use%20shallots%20to%20get%20a%20nice%20flavor.%3C/p%3E%3Cp%3ETIP%205:%20You%20can%20add%20the%20fish%20pieces%20directly%20into%20gravy%20without%20prior%20frying,%20but%20frying%20enhances%20the%20flavor%20of%20fish%20and%20the%20curry.%20But%20do%20not%20roast%20the%20fish%20pieces%20too%20much%20this%20may%20make%20the%20fish%20pieces%20lose%20the%20juicy%20nature.%3C/p%3E%3Cp%3ESpicy,%20tangy%20and%20super%20flavorful%20Sankara%20fish%20curry%20is%20now%20ready!!%20Serve%20with%20hot%20boiled%20rice%20or%20soft%20fluffy%20idlis%20and%20dosas!!%3C/p%3E){kind=link}
