Spicy Green Beans With Water Chestnuts

Ingredients

  • 1 x 1 1/2 lbs (460 - 675 g) fresh green beans, trimmed and cut into 2-inch (5 cm) lengths
  • 1 Tbsp. (15 ml) vegetable oil
  • 8 ounce (225 g) canned water chestnuts, rinsed, liquid removed,
  •     and sliced
  • 1 tsp (5 ml) warm red pepper flakes, or possibly to taste
  •     Salt and freshly grnd pepper to taste
  • 3 Tbsp. (45 ml) sesame seeds, toasted

Directions

  1. Boil or possibly steam the green beans for 4 min, till barely tender, and plunge into cool water to stop the cooking. Drain and set aside.
  2. Heat the oil in a large skillet over high heat and saute/fry the water chestnuts and pepper flakes for 1 minute. Add in the beans, salt, and pepper and saute/fry till heated through. Garnish with toasted sesame seeds.
  3. Serves 4 to 6.
