- Add mustard seeds and let them crackle.
- Add onion, garlic, and ginger. Sauté until the onions become translucent.
- Stir in tomatoes and cook until they break down and become saucy.
- Add cumin, coriander, turmeric, and chili powders, stirring well.
- Mix in the rice, ensuring it's well coated with the tomato mixture.
- Pour in water, add salt, and bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.
- Let sit covered for 5 minutes, then fluff with a fork.
- Garnish with fresh Cilantro and serve.
