Ingredients

  • 8 eggs
  • 2-3 tbsp mayo
  • 1-2 tbsp mustard
  • 1 tsp spicy brown mustard
  • 4 tbsp diced jalapenos
  • 4 tbsp relish
  • Dash pepper and salt
  • Dash cayenne
  • Dash Hot Sauce
  • Paprika

Directions

  1. Boils eggs for 13 minutes
  2. Let stand for 15 minutes, or run uner cold water for 5 minutes
  3. Crack shells (I find that rolling the egg once cracked is easier)
  4. Dry each egg in a paper towel and set aside
  5. Then cut all eggs into halves
  6. Spoon out the yolks, carefully to avoid breakage
  7. Smash yolks with large fork in a bowl
  8. Add all the seasonings and ingredients and mix well
  9. If preferred add a tiny dash of vinegar
  10. Once mixed, spoon mixture into egg halves. I use a little trick a friend taught me, which is to fill a ziploc bag with the mixture and cut off one of the corners and use it to squeeze the mix into the egg halves for a better look.
  11. Sprinkle the tops with paprika and/or cayenne
  12. Chill overnight
