Ingredients

  • 1 tbsp. + 2 tsp. olive oil
  • 1 small baguette, cut into 1 inch cubes
  • 1/2 cup plain Greek yogurt
  • 5 leaves of collard greens, stemmed and thinly sliced
  • 1 yellow onion, chopped
  • 1 sweet potato, chopped
  • 1 lemon
  • 3/4 lb. parsnips, peeled and chopped
  • 3 tbsp. golden raisins
  • 2 tbsp. tomato paste
  • 1/4 cup spice blend (a mixture of flour, cumin, curry, and turmeric)
  • Salt and pepper to taste
