Southwest Shepherd’s Pie Recipe

Ingredients

  • 2 pounds russet potatoes
  • 1 cup milk
  • 4 tablespoons butter
  • ¼ cup sour cream
  • salt and peper to taste
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 1 jalapeno, seeded and minced
  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 packet of your favorite taco seasoning
  • ½ cup vegetable or beef stock (water may be used)
  • 4 small tomatoes, diced (may use canned)
  • 1 cup of corn kernels
  • 1 cup cheddar cheese, grated
  • 2 green onions, diced (for garnish, optional)
  • Tip for picky eaters: Spread the beef and onion mixture into a 10 inch pie plate,
