Sour Cream Turkey Enchiladas

Ingredients

  • 1 doz. tortillas
  • 1 can cream of chicken soup
  • 1 can mushroom soup
  • 1/2 c. lowfat sour cream
  • 1/4 ounce. can minced chilies
  • 1/2 c. minced onions
  • 1/2 teaspoon salt
  • 2 c. minced cooked turkey
  • 2 c. grated sharp cheese

Directions

  1. Combine soups, lowfat sour cream, chilies and salt. Heat till smooth. Mix cheese, onion and turkey.
  2. Steam tortillas to soften or possibly dip in warm veg. oil. Place a portion of cheese filling across center of tortillas. Roll and place seam side down in greased casserole. Pour sauce over enchiladas. Sprinkle with more cheese if you like. Bake at 350 degrees for 40 to 45 min.
