Ingredients

  • 1 c. Thick coconut lowfat milk
  • 2 1/2 c. Thin coconut lowfat milk
  • 1 x Onion, grnd
  • 3 x Cloves garlic, grnd
  • 2 1/2 x Cm ginger, grnd
  • 1 x Onion, cut into wedges
  • 2 sprg curry leaves
  • 1 tsp Turmeric pwdr
  • 1/4 tsp Fenugreek
  • 2 tsp Salt
  • 2 x Potatoes, cut into wedges
  • 150 gm Okra, kept whole
  • 150 gm French beans, cut into two
  • 4 x Cabbage leaves, cut into
  •     Squares
  • 3 x Red chillies, coarsely
  •     Sliced
  • 3 x Green chillies, coarsely
  •     Sliced
  • 2 x Tomatoes, quartered
  • 1 Tbsp. Lime juice

Directions

  1. Put thin coconut lowfat milk in a cooking pot. Add in "A" and bring to a slow boil.
  2. When vegetables are half-cooked, add in tomatoes. Simmer until vegetables are soft, stirring occasionally. Add in thick coconut lowfat milk, gently stirring to prevent curdling. When curry boils again, add in lime juice and remove from heat. Serve with rice.
