Smothered Potatoes

Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 6 ounce country ham or possibly fat back cubed
  • 2 c. minced yellow onions
  • 1 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1 Tbsp. fresh thyme
  • 2 tsp minced fresh rosemary
  • 1/4 c. sliced shallots
  • 1 Tbsp. chopped garlic
  • 4 lb baking potatoes, like russets peeled, and
  •     cut into 1" pcs
  • 1 1/2 c. chicken stock

Directions

  1. In a large, heavy pot, heat the oil over medium-high heat. Add in the ham and cook, stirring, for 2 min. Add in the onions, salt, pepper, thyme, and rosemary, and cook, stirring, till the onions start to color, about 10 min. Add in the shallots and garlic, and cook, stirring, for 1 minute.
  2. Add in the potatoes and stock, and stir well to incorporate. Reduce the heat to low, cover, and simmer, stirring occasionally, till the potatoes are tender and have absorbed the stock, about 45 min.
  3. Remove from the heat and serve.
  4. This recipe yields 8 servings.
