Ingredients

  • 2 tsp smoked paprika
  • 2 tsp dried oregano
  • 1.5 tsp garlic powder
  • 1.5 tsp ground cumin
  • 1 tsp brown sugar
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp cayenne pepper
  • 2 tsp extra virgin olive oil
  • 1 red onion, cut into thin slices
  • 2 orange bell peppers, cut into thin slices
  • 1 green bell pepper, cut into thin slices
  • 3 carrots, cut on the diagonal into thin slices
  • 8 corn tortillas
  • Mexican shredded cheese (about 2 tbsp per fajita)
  • 1 15oz can black beans, rinsed and drained
  • Fresh cilantro – chopped
  • The Directions
  • Step 1: Heat a pan over medium heat. Add 2 tsp extra virgin olive oil. Add onion, peppers, and carrots, saute for 3-5 minutes.
