Ingredients

  • 1/2 cup egg whites
  • 1 tsp. cream of tartar
  • 3/4 cup caster sugar
  • 1/4 tsp. almond extract
  • 1/4 cup all purpose flour , sifted
  • 1/2 cup cashew nuts, finely ground and sifted
  • Icing:
  • 1/2 cup butter, softened at room temp.
  • 1/2 cup powdered sugar
  • 1/8 cup milk
  • Coating:
  • 1 3/4 cups cashew nuts, finely ground + 1/4 cup bread crumbs or
  • 1 3/4 cups cake crumbs + 1/4 cup cashew nuts, finely ground
