Ingredients

  • 1 sm. can refried beans
  • 1 can bean dip
  • 2 avocados
  • 2 teaspoon lemon juice (to mix with Avocados to keep green)
  • 1 pkg. Lawry's taco seasoning mix
  • 2 tbsp. mayonnaise
  • 2 tbsp. lowfat sour cream
  • 1/2 pound Cheddar cheese
  • 1/2 pound Jack cheese
  • 1 sm. can ripe olives, sliced
  • 3 fresh tomatoes
  • 1 bunch green onions

Directions

  1. Mix bean dip and refried beans and layer the bottom of the casserole with this mix. Mash avocados and mix with lemon juice. Apply this as the second layer over the bean dip. Mix the mayonnaise, lowfat sour cream and taco mix, this is the third layer. Grate the cheese using the large holes on your grater.
  2. First apply a layer of cheddar cheese and then a layer of jack cheese. Spread the olives over the cheese as the next layer. Chop the tomatoes into small pcs and spread over the olives. Chop green onions and layer over the tomatoes.
  3. NOTE: fresh minced cilantro could also be used in one of the layers.
