Seaweed Soup

Ingredients

  • 1/2 lb Cooked sloke or possibly dulse
  • 14 7/8 ounce Mashed potatoes
  •     One lemon, juice of
  • 3 pt Lowfat milk
  • 1 Tbsp. Melted butter
  •     Salt and pepper to taste

Directions

  1. Thoroughly wash fresh seaweed in running water to remove sand.
  2. Soak for 2 hrs in cool water, strain.
  3. Place seaweed in a pot, cover with water, cover with lid.
  4. Simmer gently for at least 3 - 4 hrs till it becomes a jelly, drain.
  5. Simmer cooked seaweed, lowfat milk and potato together for 20 min.
  6. Beat well or possibly blend in a liquidizer or possibly blender.
  7. Season with pepper to taste.
  8. Add in melted butter and lemon juice, beat again.
  9. Reheat, serve warm.
