,%20and%20the%20results%20were%20spectacular!%3C/p%3E%3Cp%3EI'm%20a%20big%20fan%20of%20putting%20%22stuff%22%20in%20my%20cookies....%22kitchen%20sink%22%20cookies,%20if%20you%20will.%20My%20daughter,%20on%20the%20hand,%20is%20a%20purest.%20No%20nuts,%20no%20pretzels,%20no%20coconut%20flakes.%20I%20still%20irritate%20her%20(mothers%20learn%20to%20do%20this%20in%20mother%20school)%20by%20asking%20each%20time%20I%20make%20cookies%20if%20I%20should%20put%20some%20walnuts%20in%20the%20batter%20(the%20answer%20is%20always%20no..or%20so%20the%20eye%20roll%20tells%20me).%20Sigh.%20So,%20instead%20I%20revved%20up%20the%20taste%20with%20some%20sea%20salt%20and%20dark%20chocolate.%20Result?%20Perfection.%20No%20nuts%20needed.%3C/p%3E%3Cp%3ESea%20Salt%20and%20Dark%20Chocolate%20Chip%20Cookies%3C/p%3E%3Cp%3Eparchment%20paper%20or%20a%20silpat.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20the%20flour,%20baking%20powder,%20baking%3C/p%3E%3Cp%3Esoda%20and%20salt;%20set%20aside.%3C/p%3E%3Cp%3EPlace%20the%20coconut%20oil%20and%20the%20brown%20sugar%20in%20a%20mixing%20bowl.%3C/p%3E%3Cp%3EBeat%20until%20light%20and%20fluffy,%20about%202%20minutes.%20Add%20the%20eggs,%20one%20at%20a%20time,%3C/p%3E%3Cp%3Ebeating%20well%20after%20each%20addition.%20Stir%20in%20the%20vanilla.%3C/p%3E%3Cp%3EAdd%20the%20flour%20mixture%20into%20the%20sugar%20mixture,%20stirring%20until%3C/p%3E%3Cp%3Ewell%20blended.%20Fold%20in%20the%20chocolate%20chips%20and%20the%20chopped%20chocolate.%3C/p%3E%3Cp%3EUse%20a%20cookie%20scoop%20to%20drop%20the%20dough%20onto%20the%20prepared%3C/p%3E%3Cp%3Ebaking%20sheets.%20Bake%20for%209-11%20minutes%20or%20until%20the%20cookies%20are%20just%20golden.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20cool%20on%20wire%20racks.%3C/p%3E%3Cp%3EPenzey's%20is%20another%20essential%20place%20for%20me...I%20have%20a%20bag%20of%20sea%20salt%20just%20for%20baking.%3C/p%3E%3Cp%3EI%20found%20the%20consistency%20of%20the%20dough%20to%20be%20a%20little%20tacky.%20Chilling%20the%20dough%20only%20made%20it%20hard..the%20coconut%20oil%20hardens%20quickly.%3C/p%3E%3Cp%3EAs%20you%20can%20see%20there%20is%20some%20spread,%20but%20not%20too%20much.%3C/p%3E%3Cp%3EI%20like%20to%20add%20additional%20chopped%20chocolate...you%20can%20see%20the%20extra%20little%20chocolate%20chunks%20next%20to%20the%20chocolate%20chips.%3C/p%3E%3Cp%3EChewy,%20with%20crisp%20edges.%20These%20cookies%20are%20great%20warm%20from%20the%20oven%20---melt-y%20dark%20chocolate%20and%20a%20little%20taste%20of%20sea%20salt....chocolate%20chip%20heaven!%3C/p%3E%3Cp%3EHow%20do%20you%20use%20Coconut%20Oil?%3C/p%3E){kind=link}
