Sarah's Rice Pudding

Ingredients

  • 1/2 cup uncooked brown rice
  • 3 eggs
  • 1/3 cup sugar
  • 2 t. vanilla
  • 1/2 cup raisins
  • 1 1/2 t grated lemon rind
  • 3 1/2 cups milk
  • 1 t. cinnamon
  • 2 T butter

Directions

  1. Preheat oven to 300 degrees.
  2. Cook rice according to package instructions.
  3. Into a 2 quart casserole, break eggs.
  4. Beat eggs and stir in sugar, vanilla, raisins, and lemon zest.
  5. Stir in milk and rice.
  6. Sprinkle with cinnamon and dot with butter.
  7. Set casserole in a baking pan filled with water to one inch below casserole.
  8. Bake uncovered for 1 hour and 25 minutes.
  9. After an hour, stir, trying not to break the top.
  10. Can be served warm or cold.
