Ingredients
- 1 cup golden syrup (such as Lyleâs Golden Syrup)
- 2 cups sugar
- 1/2 t fine sea salt
- 2 cups heavy cream
- seeds from 3 vanilla beans
- 1 t vanilla extract
- 3 T unsalted room temperature butter
- high quality coarse sea salt, such as fleur de sel, Maldon, or Penzeyâs grey sea salt, to taste, for sprinkling

.%20I%20followed%20the%20recipe%20exactly%E2%80%93which%20annoyingly%20enough%20did%20not%20include%20many%20temperatures.%3C/p%3E%3Cp%3EI%20think%20from%20here%20on%20out%20I%20will%20not%20attempt%20any%20caramel%20recipes%20that%20do%20not%20include%20exact%20temperatures%E2%80%93at%20least%20not%20until%20I%20understand%20caramel%20better.%3C/p%3E%3Cp%3EAnyway,%20feeling%20challenged,%20I%20went%20looking%20for%20caramel%20recipes.%20Something%20where%20caramel%20was%20the%20entire%20point,%20and%20might%20help%20me%20figure%20caramel%20out.%20All%20of%20this%20is%20kind%20of%20ironic%20because%20as%20much%20as%20I%20love%20caramel%20in%20some%20guises,%20I%20am%20not%20one%20of%20those%20people%20who%20loves%20anything%20caramel.%20It%20can%20be%20too%20sweet%20for%20me.%3C/p%3E%3Cp%3ESo%20when%20I%20saw%20Alice%20Medrich%20had%20a%20recipe%20for%20Salty%20Caramel%20Chews%20in%20her%20Pure%20Dessert%20I%20knew%20I%20had%20a%20winner.%20Medrich%E2%80%99s%20recipes%20are%20precise%20and%20well-explained;%20she%20was%20exactly%20what%20I%20needed.%20The%20recipe%20is%20a%20variation%20on%20her%20Vanilla%20Bean%20Caramel%20Chews%E2%80%93and%20I%20used%20vanilla%20beans%20instead%20of%20the%20extract%20alternative%20(although%20I%20also%20used%20some%20extract),%20hence%20the%20name%20of%20my%20recipe.%3C/p%3E%3Cp%3EThe%20caramel%20chews%20were%20actually%20very%20easy%E2%80%93once%20someone%20gave%20me%20a%20temperature%20instead%20of%20a%20color!%20The%20hardest%20thing%20about%20them%20is%20staring%20at%20the%20thermometer%20while%20the%20sugar%20is%20boiling%20and%20then%20wrapping%20the%20finished%20individual%20chews.%20I%20used%20a%20tad%20more%20salt%20than%20she%20calls%20for%20because%20I%20really%20like%20my%20caramel%20salty.%3C/p%3E%3Cp%3EI%20am%20submitting%20these%20caramel%20chews%20to%20The%20Domestic%20Goddess%E2%80%98s%20Sugar%20High%20Fridays,%20hosted%20this%20December%20by%20Cherrapeno,%20and%20the%20theme%20of%20which%20is%20Holidays.%20These%20caramels%20are%20perfect%E2%80%93for%20me%20anyway%E2%80%93because%20only%20the%20holidays%20could%20have%20induced%20me%20to%20make%20them%20and%20leave%20them%20on%20my%20table,%20tempting%20me%20all%20day%20long!%3C/p%3E%3Cp%3ESalty%20Vanilla%20Bean%20Caramel%20Chews%3C/p%3E%3Cp%3EVery%20closely%20adapted%20from%20Pure%20Dessert%3C/p%3E%3Cp%3ELine%20a%209%20inch%20square%20baking%20pan%20with%20foil,%20making%20sure%20it%20overhangs%20on%20all%20sides%20and%20does%20not%20tear%20when%20you%20are%20inserting%20it.%20Butter%20the%20pan%20thoroughly%20(I%20brushed%20melted%20butter%20with%20a%20silicone%20brush%20to%20make%20sure%20I%20got%20all%20the%20cracks).%20Set%20aside.%3C/p%3E%3Cp%3ECombine%20the%20golden%20syrup,%20sugar,%20and%20fine%20salt%20in%20a%20large%20(3-4%20quart),%20heavy%20saucepan%20(stainless%20steel%20or%20copper,%20for%20example).%20Place%20the%20pan%20on%20medium%20heat,%20stirring%20with%20a%20wooden%20or%20silicone%20spoon.%20Also%20keep%20a%20pastry%20or%20silicone%20brush%20in%20a%20bowl%20of%20water%20next%20to%20the%20stovetop%E2%80%93brush%20down%20the%20sides%20of%20the%20pan%20to%20wash%20the%20sugar%20and%20syrup%20from%20the%20sides.%20When%20the%20edges%20of%20the%20sugar%20mixture%20start%20to%20bubble,%20cover%20the%20pan%20and%20leave%20for%203%20minutes.%3C/p%3E%3Cp%3EIn%20the%20meantime%20pour%20the%202%20cups%20of%20cream%20into%20a%20small%20sauce%20pan%20with%20vanilla%20seeds.%20Place%20it%20on%20low%20heat.%20Keep%20an%20eye%20on%20it%E2%80%93if%20it%20start%20to%20boil,%20turn%20off%20the%20heat%20and%20cover%20it.%3C/p%3E%3Cp%3EAfter%20the%203%20minutes,%20uncover%20the%20pan%20and%20wash%20down%20the%20sides%20of%20the%20pan%20once%20more.%20Attach%20a%20candy%20thermometer%20to%20the%20side%20of%20the%20pan%E2%80%93do%20not%20let%20it%20touch%20the%20bottom%E2%80%93and%20let%20the%20candy%20mixture%20boil.%20Do%20not%20stir%20or%20disturb%20it.%20Keep%20an%20eye%20on%20the%20thermometer%E2%80%93as%20you%20do%20this%20more%20often,%20you%20will%20get%20a%20sense%20for%20which%20parts%20go%20fast%20and%20which%20go%20slow.%20For%20example,%20I%20know%20from%20marshmallows%20that%20220%20to%20245%20can%20take%20a%20while.%20But%20260%20to%20300%20seem%20to%20go%20by%20pretty%20fast,%20so%20definitely%20do%20not%20wander%20away.%20You%20are%20looking%20for%20305%20F%E2%80%93I%20think%20mine%20hit%20310,%20so%20you%20should%20be%20ok%20if%20it%20goes%20a%20little%20over.%3C/p%3E%3Cp%3EWhen%20the%20mixture%20reaches%20305%20F%20turn%20off%20the%20heat%20and%20stir%20in%20the%20butter%20chunks.%20Gradually%20pour%20in%20and%20stir%20the%20hot%20cream%20and%20vanilla%20seeds.%20It%20may%20bubble%20and%20steam%20dramatically,%20so%20be%20careful.%20Adjust%20the%20heat%E2%80%93it%20will%20vary%20by%20burner%E2%80%93so%20that%20it%20boils,%20according%20to%20Medrich,%20%E2%80%9Cenergetically%20but%20not%20violently%E2%80%9D.%20Stir%20until%20any%20syrup%20at%20the%20bottom%20of%20the%20pan%20is%20dissolved%20into%20the%20mixture.%20Continue%20to%20boil,%20stirring%20occasionally,%20until%20the%20mixture%20reaches%20245%20F%20at%20which%20point%20begin%20to%20stir%20constantly%20until%20the%20mixture%20reaches%20260%20F%20for%20softer%20chews%20or%20265%20F%20for%20firmer%20chews.%3C/p%3E%3Cp%3EAt%20260%20or%20265,%20remove%20the%20pan%20from%20the%20heat%20and%20add%20the%20vanilla%20extract,%20stirring%20to%20mix.%20Pour%20the%20hot%E2%80%93be%20careful!!%E2%80%93%20caramel%20into%20the%20prepared%20pan.%20Let%20it%20set%20for%204-5%20hours,%20or%20as%20long%20as%20overnight.%3C/p%3E%3Cp%3ESprinkle%20the%20sea%20salt%20over%20the%20top%20of%20the%20caramel%20and%20then%20use%20clean%20hands%20to%20press%20the%20salt%20lightly%20into%20the%20caramel%20so%20that%20it%20sticks%20and%20does%20not%20brush%20off.%20Remove%20the%20caramel,%20using%20the%20foil%20overhang,%20from%20the%20pan.%20Press%20a%20square%20of%20parchment%20paper%20lightly%20into%20the%20top%20of%20the%20caramel%20and%20then%20invert%20it.%20Slowly%20and%20carefully%20peel%20the%20foil%20away%20from%20the%20caramel.%20Sprinkle%20sea%20salt%20onto%20the%20back%20side%20as%20well,%20pressing%20it%20once%20again%20lightly%20into%20the%20caramel.%20Use%20an%20oiled%20knife%20to%20slice%20a%209%20by%209%20grid%E2%80%93i.e.,%20you%20will%20get%2081%201-inch%20caramels.%20Wrap%20each%20one%20into%20cellophane%20or%20wax%20paper.%3C/p%3E){kind=link}
