Ingredients

  • 200 gm salt fish (flesh only)
  • 20 gm coriander (ketumbar)
  • 5 gm fenugreek (halba)
  • 5 gm fennel (jintan manis)
  • 5 gm cummin (jintan putih)
  • 10 x dry chillies (remove seeds and soak in water)
  • 2 x inches fresh turmeric
  • 10 x shallots
  • 3 x pips garlic
  • 3 x cloves
  • 3 x star anise
  • 3 Tbsp. vinegar
  • 120 gm sugar
  • 2 stalk curry leaves
  •     oil for cooking

Directions

  1. MethodCut salt fish into desired sizes, wash and drain. Fry in warm oil till lightly brown. Remove and set aside.
  2. Heat pan with 4 tbsp oil. Add in shallots and garlic. Stir-fry until fragrant, then add in all grnd ingredients and spices.
  3. Add in salt fish, vinegar, curry leaves, salt and sugar to taste. Reduce heat and simmer for another half hour. Cold and store in air-tight jar.
