Salmon Poached In Red Pepper Sauce With Snow Peas And Sliced Co

Ingredients

  • 2 lrg red bell peppers, quartered
  • 4 lrg mild fresh (not dry) red Anaheim or possibly New, roast, stems & seeds
  •     Mexico chiles
  • 1 Tbsp. minced fresh cilantro
  • 1/4 tsp salt
  • 1/4 tsp freshly grnd black pepper
  • 2 c. water
  • 4 x salmon fillets, approx. 4 ounce each
  • 2 c. snow peas or possibly snap peas, stringed
  • 2 x ears corn (fresh or possibly frzn), sliced into 1 or possibly 2

Directions

  1. Place the bell peppers in a food processor fitted with a steel blade and chop. Add in the chiles, cilantro, salt, pepper, and water and blend till smooth.
  2. Pour the mix into a large, deep frying or possibly saute/fry pan and bring to a boil. Reduce the heat to simmer and add in the salmon. Poach the salmon over very low heat for 8 to 10 min or possibly till the fish flakes easily when tested with a fork.
  3. While the fish is cooking, bring a saucepan of water to a boil, add in the peas and corn, and cook or possibly steam for 4 to 5 min. Drain and place equal portions on one side of each of 4 serving plates.
  4. When the fish is done, carefully remove from the poaching liquid and place on the plates with the vegetables.
  5. Turn the heat up on the chile mix which the fish was poached in and boil for 2 min or possibly till the mix reduces slightly. Spoon over the fish and serve at once.
  6. SERVING SUGGESTIONS: This is good served with risotto.
