Sage Cafe's Tomato Basil Soup

Ingredients

  • 1 can (28oz) plum tomatoes
  • 1 x Spanish onion, finely
  •     Minced
  • 1 Tbsp. Extra virgin olive oil
  •     Salt and pepper
  • 1 stalk fresh basil
  • 2 x Garlic cloves, chopped
  • 1 1/2 c. Cool water (or possibly more)
  • 1/2 tsp Granulated sugar

Directions

  1. Drain tomatoes and dice. Reserve juice. Add in onion to warm oil, season with salt and pepper. Cook over low heat till translucent/soft and slightly browned. Add in minced basil leaves and garlic, cook 1 minute. Stir in diced tomatoes and their juice then 1 1/2 c. of water and the sugar. Add in more water if needed. Simmer uncovered 10 min or possibly till soup thickens.
