Ingredients
- 6 T high quality Dutch Cocoa (I used Valrhona)
- 1/4 cup heavy cream
- 1 cup plus 2 T AP flour
- 1/4 t baking soda
- 1/4 t salt
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1 1/2 cups superfine sugar
- 3 large eggs, room temperature
- 1 t vanilla
- 1/4 t espresso powder

%20but%20after%20sitting%20a%20day%20or%202,%20it%20became%20perfect%20on%20its%20own.%3C/p%3E%3Cp%3ERustic%20Cocoa%20Cream%20Loaf%20Cake%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Cake%20Keeper%20Cakes,%20Lauren%20Chattman%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%20F.%20Grease%20and%20flour%20(or%20spray%20with%20Baker%E2%80%99s%20Joy)%20a%209X5%20loaf%20pan.%20Set%20aside.%3C/p%3E%3Cp%3ESift%20the%20cocoa%20powder%20into%20a%20glass%20(or%20any%20heatproof)%20bowl.%20Add%20the%20espresso%20powder%20to%20the%20cocoa.%20Place%20the%20cream%20in%20the%20microwave%20and%20heat%20on%20short%20bursts%20until%20it%20is%20steaming/nearly%20boiling.%20Pour%20it%20over%20the%20cocoa.%20Using%20a%20small%20spatula,%20mash%20and%20stir%20this%20into%20a%20paste.%20Set%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20soda%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EPlace%20the%20butter%20and%20sugar%20in%20a%20large%20mixing%20bowl%20and%20cream%20on%20medium%20high%20speed%20until%20light%20and%20fluffy,%20about%203%20minutes.%20Scrape%20down%20the%20sides%20of%20the%20bowl%20as%20necessary.%20Beat%20the%20cocoa%20paste%20in%20until%20it%20is%20smooth.%3C/p%3E%3Cp%3EWith%20the%20mixer%20on%20speed%202%20(or%20one%20notch%20above%20low),%20add%20the%20eggs,%20one%20at%20a%20time,%20scraping%20down%20the%20sides%20of%20the%20bowl%20after%20each%20egg.%20Add%20the%20vanilla%20and%20mix%20it%20in%20as%20well.%3C/p%3E%3Cp%3EWith%20the%20mixer%20on%20low%20speed,%20add%20the%20flour%20mixture%20in%203%20additions,%20scraping%20down%20the%20sides%20of%20the%20bowl%20after%20each%20addition.%20After%20the%20last%20addition,%20increase%20the%20speed%20a%20bit%20for%20up%20to%2030%20seconds%20to%20ensure%20the%20batter%20is%20totally%20mixed.%3C/p%3E%3Cp%3EScrape%20the%20batter%20into%20the%20prepared%20pan%20and%20smooth%20the%20top%20with%20a%20spatula.%20Bake%20the%20cake%20until%20it%20is%20firm%20to%20the%20touch%20and%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean,%20about%2070%20minutes.%20Let%20the%20cake%20cool%20in%20the%20pan%20for%205%20minutes%20and%20then%20invert%20it%20out%20onto%20a%20cooling%20rack%20and%20flipping%20it%20right%20side%20up%20to%20finish%20cooling%20completely.%3C/p%3E%3Cp%3Ecake,%3C/p%3E%3Cp%3Echocolate,%3C/p%3E%3Cp%3Ecocoa,%3C/p%3E%3Cp%3Ecream,%3C/p%3E%3Cp%3Eheavy%20cream,%3C/p%3E%3Cp%3Eloaf%20cakes%3C/p%3E){kind=link}
