Rum Pound Cake

Ingredients

  • 2 3/4 cup sugar
  • 1 1/4 cup butter, softened
  • 5 eggs
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 cup evaporated milk (you can use fat-free like I did)
  • 1/2 Bottle Rum Extract

Directions

  1. Preheat oven to 350
  2. In a large bowl, pour sugar, butter, eggs, and extract; beat on low for 30 seconds.
  3. Then beat on high for five minutes. Next beat in flour, baking powder and salt. Alternate with milk on low speed. Pour in a Bundt pan and bake 70 to 80 minutes or until toothpick comes out clean. Let cool 20 minutes to serve.
  4. I put mine in two loaf pans and baked for around 50 minutes. Just keep an eye on it. It may start to brown too much on top just wrap it in foil and continue to bake until toothpick comes out clean.
