Couldn't be an easier pie to make - and perfect for summer's lighter menu fare. A nice do-ahead gelatin dessert that takes just minutes to prepare. You can "have your pie and eat it too" for less than 150 calories per slice when you make a few changes to the recipe below: just substitute no-added-sugar gelatin, reduced-fat graham cracker crust, and light or non-fat whipped topping. One slice of pie with these changes has 142 calories, 20 carbs, 5 grams fat and 2.5 grams protein.
Ingredients
- 1 6-ounce box strawberry Jello (8 serving-size)
- 2 cups boiling water
- 2 cups frozen unsweetened strawberries* (DO NOT THAW)
- 1 cup frozen whipped topping, thawed (plus optional additional topping for garnish dollops)
- 1 prepared graham cracker crust (6 ounces)
- NOTE: * To use fresh strawberries for this recipe, slice and freeze them several hours ahead or overnight, then use them frozen.
Directions
- Place gelatin in heat proof bowl; add boiling water and stir until dissolved, about 2 minutes.
- Stir in frozen strawberries, stirring briefly. Refrigerate till partially set, about 10-15 minutes. Do not allow to chill firm.
- Mix in 1 cup thawed whipped topping. Pour into graham cracker crust. Chill thoroughly. Serve with optional dollops of whipped topping.
