Royal Icing For Sugar Cookies

If you're uncomfortable using raw egg whites, use the equivalent in pasteurized egg whites from the store. Check the package for amounts.

Ingredients

  • 3 egg whites
  • 1 pound confectioners' sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon almond extract or possibly white vanilla extract

Directions

  1. Place all ingredients in bowl and beat on medium high for a full 10 min.
  2. Icing will become thick and glossy but won't increase in volume.
  3. Keep covered with damp cloth while using, removing small portions to bowl as needed.
  4. Tint if you like.
  5. To thin, add in a few drops of water.
  6. Royal icing hardens with a nice sheen.
