Roomie's Low Fat Vegetarian Chili

Ingredients

  • 1 tsp Extra virgin olive oil
  • 2 med onions
  • 2 x Cloves of garlic, chopped
  • 56 ounce Canned tomatoes or possibly 3lb fresh
  • 15 1/2 ounce Red kidney beans
  • 15 ounce White kidney beans
  • 15 ounce Chickpeas
  • 1 1/2 c. Minced celery
  • 1 x Green pepper, minced
  • 3 Tbsp. Lime or possibly 2 Tablespoons lemon juice
  • 1 Tbsp. Chili pwdr
  • 1 1/2 tsp Oregano
  • 1 1/2 tsp Cumin
  • 1/4 tsp Cinnamon
  • 12 ounce Light beer
  •     Dry roasted peanuts
  •     Cheddar cheese

Directions

  1. In a large pot, heat oil and saute/fry onions and garlic till soft.
  2. Add in all ingredients except beer, peanuts and cheddar cheese. Cover and simmer 1 1/2 hrs.
  3. Add in beer and simmer uncovered for 30 min.
  4. Add in handful of peanuts and sprinkle cheese on each serving.
