Romanian Mititei (Little Sausages) Recipe

This is a great traditional recipe for Romanian Mititei. Mititei are skinless sausages, usually grilled, and the name literally means "little ones". They taste really well grilled, but can also be pan fried and pair well with homemade fries or a tomato/cucumber salad. Traditionally they are enjoyed with mustard, a roll of bread and beer, but anything goes!

Directions

  1. 1.Mix meat together really well in a large bowl. Add spices, one by one until well mixed in the meat.
  2. 2.Add beef broth (or seltzer) to the mix and the oil until well mixed in.
  3. 3.Add garlic last and mix until well combined.
  4. *note - The difference between the beef broth and seltzer is that the seltzer will make the sausages more "puffy" when combined with the baking soda and allowed to rise. For more dense sausages, the beef broth is perfectly fine. The amount of garlic used can be adjusted to taste. You can also mix off a little piece and fry it in a pan to adjust seasonings as you'd like before taking the next steps.
  5. 4. Cover the bowl and put it in the fridge for 2-8hrs. If you don't want to use the entire mix, you can freeze the mix after 2 hrs in the fridge to save it for the next time you want to use it.
  6. 5.After 2 hrs, take the bowl out and form sausage-length links in your palm that are about 1-1 .5 in thick and about 3in long.
  7. 6. Cook these on the grill until well done inside, being careful to turn them regularly so they don't burn. Approximately 6-8 min on each side.
  8. Serve immediately and enjoy!
