%20Globe%20Artichokes?%20They%20come%20in%20colors%20that%20range%20from%20pale%20green,%20through%20purple,%20to%20almost%20black.%20These%20beauties%20are%20most%20often%20steamed.%20Which%20is%20delicious.%20But%20I%20find%20roasted%20artichokes%20express%20their%20uniquely%20nutty%20flavor%20even%20better.%3C/p%3E%3Cp%3EBefore%20we%20discuss%20roasted%20artichokes%20I%20think%20we%20need%20to%20address%20an%20obvious%20fact:%20Artichokes%20look%20menacing.%20The%20biggest%20and%20scariest%20of%20them%20have%20pointy%20tips%20that%20are%20capable%20of%20drawing%20blood%20if%20handled%20too%20casually.%20After%20all%20an%20artichoke%20is%20a%20thistle,%20and%20thistle%20is%20not%20an%20appetizing%20word.%20So%20I%20understand%20why%20you%20often%20stare%20at%20the%20artichoke%20in%20your%20produce%20section,%20pondering%20how%20just%20how%20to%20handle%20this%20unruly%20beauty%20without%20actually%20picking%20it%20up.%20I%20also%20understand%20why%20you%20often%20walk%20away%E2%80%93%20feeling%20defeated.%3C/p%3E%3Cp%3EThe%20artichoke%20is%20one%20of%20the%20most%20delicately%20flavored%20vegetables.%20I%20know%20you%20love%20its%20distinctive%20taste.%20However,%20the%20best%20artichokes%20have%20a%20relatively%20short%20season%20that%20peaks%20in%20May.%20Each%20week%20you%20stand%20there%20pondering,%20the%20roasted%20artichoke%20window%20is%20closing.%20So%20before%20you%20walk%20away%20from%20an%20artichoke%20one%20more%20time,%20I%20want%20to%20remind%20you%20that%20the%20artichoke%E2%80%99s%20rough%20exterior%20is%20hiding%20a%20heart%20of%20green%20gold.%3C/p%3E%3Cp%3ERoasted%20Artichokes%3C/p%3E%3Cp%3EThis%20version%20of%20Roasted%20Artichokes%20is%20adapted%20from%20a%20traditional%20Italian%20method%20where%20the%20artichokes%20are%20dressed%20with%20bold%20flavors%20then%20cooked%20in%20the%20embers%20of%20a%20wood%20fire.%20Which%20would%20certainly%20be%20special.%20However,%20this%20classic%20Italian%20method%20is%20easily%20handled%20at%20home%20in%20a%20very%20hot%20oven.%20GREG%3C/p%3E%3Cp%3EThese%20Purple%20Artichokes%20were%20supplied%20to%20me%20by%20Melissa%E2%80%99s%20Produce.%20I%20received%20no%20other%20compensation.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPlace%20the%20oven%20rack%20in%20the%20center%20position%20then%20preheat%20oven%20to%20500%C2%B0%20F.%3C/p%3E%3Cp%3EIn%20a%202-cup%20or%20larger%20pitcher,%20whisk%20together%20oil,%20wine,%20oregano,%20chile%20flakes,%20garlic,%20salt%20and%20pepper%20until%20emulsified.%3C/p%3E%3Cp%3ECut%201-inch%20off%20the%20top%20of%20each%20artichoke%20and%20gently%20pull%20leaves%20apart%20to%20open.%20If%20there%E2%80%99s%20some%20stem%20attached%20trim%20it%20off%20so%20that%20the%20artichoke%20can%20sit%20upright.%20Then%20place%20the%20artichokes,%20standing%20up%20on%20their%20bases,%20in%20a%20small%20roasting%20dish%20large%20enough%20to%20hold%20them%20in%20a%20single%20layer.%20You%20may%20peel%20the%20stems%20and%20place%20them%20in%20the%20dish%20as%20well.%3C/p%3E%3Cp%3EPour%20half%20of%20the%20oil%20mixture%20over%20each%20artichoke,%20making%20sure%20the%20liquid%20reaches%20in%20between%20all%20leaves.%20Cover%20with%20the%20dish%20with%20aluminum%20foil,%20and%20roast%20for%2045%20minutes.%20Uncover,%20and%20continue%20to%20roast,%20basting%20often%20with%20juices,%20until%20well-browned%20and%20tender;%20about%2020%20minutes%20more.%20Let%20cool%20for%2010%20minutes%20before%20serving%20with%20the%20pan%20juices%20on%20the%20side%20for%20dipping.%3C/p%3E%3Cp%3EShare%3C/p%3E){kind=link}
