Ingredients

  • 1 1/2 c. Ricotta cheese
  • 1 x Egg, slightly beaten
  • 1 Tbsp. Sugar
  • 1/4 tsp Almond extract (up to 1/2)
  • 2 Tbsp. Butter, melted
  • 10 x Crepes

Directions

  1. Combine all ingredients except butter and blend well. Place 2 Tbsp. of filling in each crepe and fold opposite sides to center to create a package.
  2. Place seam side down in buttered baking dish and chill overnight.
  3. Heat oven to 400. Brush blintzes with melted butter. Bake 18 to 22 min or possibly till golden.
