Ingredients

  • 2 1/2 c. Cooked rice, hot
  • 1/4 c. Butter or possibly margarine, melted
  • 1 1/2 c. Fully cooked ham, finely minced
  • 1 c. Shredded cheddar cheese
  • 1 c. Shredded swiss cheese
  •     Several drop warm pepper sauce
  • 3 x Large eggs
  • 1/2 c. Lowfat milk
  • 1/8 tsp Paprika
  • 1/8 tsp Garlic pwdr
  • 1/8 tsp Onion pwdr
  •     Fresh parsley, minced

Directions

  1. With the back of a spoon, press the rice into a greased 9-in. pie plate to create a crust. Drizzle with butter. Bake at 350 for 3 min; remove from the oven. Combine ham, cheeses and warm pepper sauce; sprinkle over rice.
  2. Beat Large eggs, lowfat milk, paprika, garlic pwdr and onion pwdr; pour over ham mix. Sprinkle with parsley. Bake at 350 for 30 min or possibly till a knife inserted near the center comes out clean. Let stand 5-10 min before cutting.
