Ingredients
- 2 cups cake flour
- 3/4 cup cocoa
- 11/2 teaspoons baking soda
- 3/4 teaspoon salt
- 3/4 cup butter, room temperature
- 2 cups golden brown sugar
- 3 large eggs
- 11/2 teaspoons vanilla extract
- 1 cup buttermilk
- 3/4 cup red wine
- For the Frosting:
- 11/2 cups chilled heavy whipping cream, divided
- 1/3 cup white chocolate, grated
- 1 cup sugar
- 2 8-ounce containers chilled mascarpone cheese
- For the Sugared Cranberry Garnish:
- 2 cups sugar
- 1 cup water
- 1 cup red wine
- 2 cups fresh cranberries
- 3/4 cup granulated sugar

,%20I%20saw%20greater%20potential%20in%20taking%20it%20into%20the%20realm%20of%20holiday%20as%20I%20spied%20cranberries%20in%20the%20freezer%20and%20my%20mind%20immediately%20veered%20off%20path%20and%20I%E2%80%99m%20so%20glad%20it%20did.%20Besides%20that?%20My%20daughter%20Emily%20and%20I%20both%20have%20birthdays%20this%20month;%20maybe%20this%20is%20for%20us!%3C/p%3E%3Cp%3EThe%20combination%20of%20a%20dark%20chocolate%20cake%20with%20red%20wine%20topped%20with%20a%20mascarpone%20and%20whipped%20cream%20frosting%20seemed%20delightful%20enough%20but%20it%20was%20the%20addition%20of%20sugared%20cranberries%20on%20top%20that%20really%20won%20my%20guests%20over%20this%20time.%20I%20just%20love%20those%20little%20orbs%20and%20it%20was%20fun%20to%20see%20people%20try%20them%20for%20the%20first%20time%20and%20join%20me%20in%20that%20love.%20Tart%20and%20just%20barely%20softened%20by%20a%20quick%20simmer%20and%20then%20covered%20with%20sugar%20that%20dries%20to%20a%20hard%20shell,%20they%20are%20so%20easy,%20taste%20amazing%20and%20really%20are%20the%20icing%20on%20the%20proverbial%20cake.%20So%20beautiful%20with%20their%20deep%20red%20color%20topped%20with%20a%20bit%20of%20sparkle.%20This%20time%20around%20I%20tried%20something%20new%20and%20simmered%20them%20in%20the%20same%20red%20wine%20I%20had%20used%20in%20the%20cake.%20Oh%20my%20is%20right.%20I%20suggest%20making%20extra;%20you%20will%20want%20to%20snack%20on%20as%20many%20of%20them%20as%20you%20put%20on%20the%20cake!%3C/p%3E%3Cp%3ETruly%20a%20special%20dessert%20fit%20for%20a%20celebration.%20Happy%20Holidays!%20(And%20Happy%20Birthday%20Em!)%3C/p%3E%3Cp%3E3.3.3077%3C/p%3E%3Cp%3EBarbYields%208%3C/p%3E%3Cp%3ERed%20Wine%20Chocolate%20Cake%20with%20Sugared%20Cranberries%3C/p%3E%3Cp%3E30%20minPrep%20Time%3C/p%3E%3Cp%3E50%20minCook%20Time%3C/p%3E%3Cp%3E1%20hr,%2020%20Total%20Time%3C/p%3E%3Cp%3ESave%20Recipe%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20Cake:%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPrepare%20the%20Cake%20Layers:%3C/p%3E%3Cp%3EPosition%20rack%20in%20center%20of%20oven;%20preheat%20to%20325.%20Generously%20butter%20two%209-inch%20cake%20pans;%20dust%20with%20flour,%20tapping%20out%20excess.%20Line%20bottom%20of%20pan%20with%20parchment%20paper.%3C/p%3E%3Cp%3ESift%202%20cups%20cake%20flour,%20cocoa,%20baking%20soda%20and%20salt%20into%20medium%20bowl.%3C/p%3E%3Cp%3EUsing%20electric%20mixer,%20beat%20butter%20in%20large%20bowl%20until%20smooth.%20Add%20brown%20sugar%20and%20beat%20until%20well%20blended,%20about%202%20minutes.%3C/p%3E%3Cp%3EAdd%20eggs,%201%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20Mix%20in%20vanilla.%3C/p%3E%3Cp%3EAdd%20flour%20mixture%20in%203%20additions%20alternately%20with%20buttermilk%20in%202%20additions,%20beating%20just%20until%20blended%20after%20each%20addition.%3C/p%3E%3Cp%3EGradually%20add%20wine,%20beating%20just%20until%20smooth.%3C/p%3E%3Cp%3EDivide%20batter%20between%20pans;%20smooth%20tops.%20Bake%20cakes%20until%20tester%20inserted%20into%20center%20comes%20out%20clean,%20about%2040%20minutes.%20Cool%20cakes%20in%20pans%20on%20rack%2015%20minutes.%20Run%20small%20knife%20around%20sides%20of%20pans%20to%20loosen%20cakes.%20Invert%20cakes%20onto%20racks;%20lift%20pans%20off%20cakes%20and%20remove%20parchment.%20Place%20wire%20rack%20atop%20each%20cake,%20invert%20again%20so%20top%20side%20is%20up.%3C/p%3E%3Cp%3ECool%20completely.%3C/p%3E%3Cp%3ETo%20Make%20the%20Frosting:%3C/p%3E%3Cp%3EBring%201%20cup%20cream%20to%20boil%20in%20small%20saucepan.%20Slowly%20pour%20cream%20over%20grated%20white%20chocolate%20and%20stir%20until%20smooth.%20Add%201/2%20cup%20of%20the%20whipping%20cream%20and%20sugar;%20stir%20until%20sugar%20dissolves.%20Chill%20until%20cold,%20at%20least%202%20hours.%20Can%20be%20made%20one%20day%20ahead;%20cover%20and%20keep%20chilled.%3C/p%3E%3Cp%3EAdd%20mascarpone%20to%20chilled%20mixture;%20Using%20electric%20mixer;%20beat%20on%20low%20speed%20until%20blended%20and%20smooth.%20Increase%20speed%20to%20medium-high;%20beat%20until%20mixture%20is%20thick%20and%20medium-firm%20peaks%20form%20when%20beaters%20are%20lifted,%20about%202%20minutes%20(do%20not%20overbeat%20or%20mixture%20will%20curdle).%3C/p%3E%3Cp%3ETo%20Assemble%20the%20Cake:%3C/p%3E%3Cp%3EBrush%20crumbs%20from%20cakes.%20Place%20one%20cake%20layer,%20top%20side%20up,%20on%20platter.%20Divide%20frosting%20in%20half%20and%20spread%20one-half%20on%20first%20cake%20layer.%20Using%20offset%20spatula,%20spread%20frosting%20to%20edges.%20Top%20with%20second%20layer,%20top%20side%20up.%20Spread%20remaining%20frosting%20over%20top%20of%20cake.%3C/p%3E%3Cp%3EChill.%3C/p%3E%3Cp%3ETo%20make%20sugared%20cranberries:%3C/p%3E%3Cp%3EWash%20cranberries%20and%20remove%20any%20bad%20berries.%3C/p%3E%3Cp%3ETo%20Make%20the%20Sugared%20Cranberries:%3C/p%3E%3Cp%3ECombine%20sugar,%20water%20and%20wine%20in%20a%20small%20pan%20and%20bring%20to%20a%20simmer%20over%20medium%20heat,%20stirring%20until%20sugar%20dissolves.%20Add%20cranberri
