Ingredients
- potatoes, with some other ingredients mixed in. But the presentation can be
- 1 medium potato, peeled, 1â cubes
- 3 cloves garlic, minced
- ½ cup mild Cheddar cheese
- 3 tablespoons sour cream (with chives, if desired)
- salt & pepper, to taste
- 24 wonton wrappers
- 6 tablespoons sour cream (recommend with chives, or
- add fresh)

.%3C/p%3E%3Cp%3EThe%20filling%20is%20basically%20cheesy%20mashed%3C/p%3E%3Cp%3Epotatoes,%20with%20some%20other%20ingredients%20mixed%20in.%20But%20the%20presentation%20can%20be%3C/p%3E%3Cp%3Enice%20enough%20to%20make%20people%20think%20you%20spent%20a%20long%20time%20making%20them.%20I%20used%3C/p%3E%3Cp%3Esquare%20wonton%20wrappers%20because%20that's%20what%20they%20had%20at%20my%20store,%20but%20round%20ones%3C/p%3E%3Cp%3Ewould%20be%20the%20more%20traditional%20shape.%20I%20was%20a%20big%20fan%20of%20how%20crunchy%20they%20were%3C/p%3E%3Cp%3Eon%20the%20edges%20with%20the%20nice%20soft%20contrast%20of%20the%20filling.%20I%20also%20purchased%20sour%3C/p%3E%3Cp%3Ecream%20with%20chives%20already%20mixed%20in,%20because%20I%20sure%20enough%20never%20figure%20out%3C/p%3E%3Cp%3Esomething%20to%20do%20with%20the%20rest%20of%20the%20fresh%20chives%20before%20they%20go%20bad.%20I'm%3C/p%3E%3Cp%3Eplanning%20on%20using%20the%20rest%20of%20the%20premixed%20sour%20cream%20and%20chives%20in%20baked%3C/p%3E%3Cp%3Epotatoes%20and%20maybe%20a%20dip%20for%20chips.%3C/p%3E%3Cp%3EAs%20you%20can%20see%20from%20the%20pictures%20I%20served%3C/p%3E%3Cp%3Ethe%20dumplings%20with%20asparagus%20and%20just%20the%20sour%20cream%20%22dip%22%20and%20it%20was%3C/p%3E%3Cp%3Eactually%20plenty.%20For%20me%20they%20were%20more%20of%20a%20main%20dish%20but%20you%20could%20also%20serve%3C/p%3E%3Cp%3Ethem%20with%20meatloaf%20or%20chicken%20and%20have%20the%20dumplings%20be%20a%20side%20dish.%20I'm%20a%3C/p%3E%3Cp%3Epretty%20big%20fan%20of%20side%20dished%20that%20end%20up%20as%20main%20dishes%20:).%20I%20also%20like%20individual%3C/p%3E%3Cp%3Eservings%20of%20foods%20(especially%20desserts),%20but%20that's%20a%20completely%20different%3C/p%3E%3Cp%3Estory.%20So,%20if%20you're%20looking%20for%20a%20way%20to%20use%20up%20those%20wonton%20wrappers%20or%20a%3C/p%3E%3Cp%3Equick%20and%20easy%20weeknight%20dinner,%20give%20it%20a%20whirl%20and%20let%20me%20know%20what%20you%3C/p%3E%3Cp%3Ethink!%3C/p%3E%3Cp%3EQuick%20Potato%20Dumplings%3C/p%3E%3Cp%3EMakes%20about%2024%20(serves%206)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20350F.%20In%20a%20medium%20saucepan%3C/p%3E%3Cp%3Ecover%20the%20potato%20with%20water%20and%20cook%20over%20high%20heat%20until%20the%20potato%20is%20tender,%3C/p%3E%3Cp%3E8-10%20minutes.%20Drain%20the%20water%20from%20the%20pan%20and%20add%20the%20cooked%20potato%20to%20a%3C/p%3E%3Cp%3Emedium%20bowl.%3C/p%3E%3Cp%3E2.%20Add%20the%20garlic,%20cheese,%203%20T.%20sour%20cream,%20salt,%20and%3C/p%3E%3Cp%3Epepper.%20Mash%20the%20mixture%20together%20until%20well%20blended,%20but%20do%20not%20overmix%20or%20the%3C/p%3E%3Cp%3Epotatoes%20might%20become%20gummy.%3C/p%3E%3Cp%3E3.%20Lay%20out%20the%20wonton%20wrappers%20individually%20and%3C/p%3E%3Cp%3Edivide%20up%20the%20potato%20mixture%20in%20the%20center%20of%20the%20wrappers,%20use%20about%20%C2%BE%20T.%20-%201%3C/p%3E%3Cp%3ET.%20filling%20for%20each.%20Using%20your%20finger%20or%20a%20pastry%20brush,%20brush%20water%20along%20the%3C/p%3E%3Cp%3Eedges%20of%20the%20wrapper%20on%20one%20side.%20Fold%20the%20wrapper%20over%20the%20filling%20and%20gently%3C/p%3E%3Cp%3Epress%20the%20edges%20together.%20Place%20the%20dumplings%20on%20a%20cooling%20rack%20on%20a%20cookie%3C/p%3E%3Cp%3Esheet.%20Lightly%20spray%20both%20sides%20of%20the%20dumplings%20with%20cooking%20spray,%20then%20bake%3C/p%3E%3Cp%3Efor%2015-17%20minutes,%20until%20golden%20brown.%3C/p%3E%3Cp%3E4.%20Serve%20the%20dumplings%20with%20the%20remaining%20sour%20cream,%3C/p%3E%3Cp%3Efor%20dipping.%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20Weight%20Watchers%3C/p%3E%3Cp%3EThis%20recipe%20may%20be%20linked%20up%20to:%3C/p%3E){kind=link}
