%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EDump%203%20c.%20flour%20in%20a%20large%20bowl,%20making%20a%20well%20in%20the%20middle.%20To%20the%20center,%20add%201%20c.%20water%20and%202%20Tbsp.%20oil.%20With%20a%20fork,%20begin%20mixing%20the%20water%20and%20oil,%20slowly%20pulling%20flour%20in%20from%20the%20sides%20as%20you%20go.%20Continue%20until%20all%20of%20the%20flour%20is%20mixed%20in%20(you%20may%20need%20to%20mix%20with%20your%20hands%20instead%20of%20your%20fork%20at%20a%20certain%20point%20-%20that's%20what%20I%20do).%3C/p%3E%3Cp%3EKnead%20the%20dough%20for%20about%205%20minutes%20until%20it's%20a%20uniform%20consistency.%20Cover%20with%20a%20wet%20towel%20and%20let%20rest%2010-15%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20make%20your%20ravioli%20filling%20by%20combining%20pumpkin,%20sweet%20potato,%20nutmeg,%20cinnamon%20and%20Pecorino%20cheese%20in%20a%20blender%20or%20food%20processor%20and%20mixing%20until%20smooth.%3C/p%3E%3Cp%3EBack%20to%20the%20dough.%20Break%20off%201/4%20of%20the%20dough%20and%20begin%20rolling%20it%20out%20using%20a%20pasta%20maker.%20Starting%20at%20the%20highest%20setting,%20run%20the%20dough%20through,%20flour%20it%20and%20run%20it%20through%20again.%20Repeat%201-2%20times%20until%20dough%20is%20smooth.%20Then%20start%20running%20it%20through%20one%20pass%20at%20a%20time%20(NO%20flour%20in%20between),%20lowering%20the%20setting%20with%20each%20pass%20so%20the%20dough%20gets%20thinner%20and%20thinner.%3C/p%3E%3Cp%3EI%20usually%20only%20roll%20my%20ravioli%20dough%20out%20to%20the%202nd%20or%203rd%20to%20last%20setting%20(%222%22%20or%20%223%22%20on%20my%20machine)%20-%20otherwise%20it%20gets%20too%20thin.%20In%20the%20end,%20you%20should%20have%204%20sheets%20of%20pasta,%20each%20about%205%20inches%20wide%20(and%20really%20long%20-%20not%20sure%20how%20long%20-%20just%20really%20long!)%3C/p%3E%3Cp%3ELay%20the%20sheets%20out%20on%20a%20floured%20surface.%20Place%20heaping%20teaspoons%20of%20filling%20toward%20the%20front%20of%20each%20pasta%20sheet,%20spacing%20about%202-3%20inches%20apart%20as%20you%20move%20lengthwise%20down%20the%20sheet.%3C/p%3E%3Cp%3EBeat%20the%20egg%20white%20slightly%20and%20brush%20lightly%20around%20the%20edges%20of%20the%20pasta%20dough%20and%20in%20between%20each%20spoonful%20of%20filling.%20Fold%20the%20back%20side%20of%20the%20pasta%20over%20the%20top%20of%20the%20filling,%20lining%20the%20back%20edge%20up%20to%20the%20front%20edge.%20Press%20around%20each%20mound%20of%20filling,%20pushing%20any%20air%20bubbles%20out%20of%20the%20center%20and%20through%20the%20ends%20of%20the%20dough.%3C/p%3E%3Cp%3ECut%20the%20dough%20between%20each%20mound%20of%20filling%20and%20crimp%20all%204%20edges%20of%20the%20resulting%20ravioli%20with%20a%20fork%20to%20seal.%3C/p%3E%3Cp%3EBoil%20a%20large%20pot%20of%20water.%20Place%20raviolis%20in%20water%20in%20batches,%20cooking%20for%204-5%20minutes%20at%20a%20time.%3C/p%3E%3Cp%3EWhile%20cooking%20the%20raviolis,%20bring%201%20stick%20of%20butter%20to%20a%20boil%20over%20medium%20heat.%20Cook%20about%205%20minutes%20until%20frothy,%20then%20add%20in%20sage%20leaves.%20Continue%20cooking%20the%20butter%20just%20until%20it%20starts%20to%20turn%20brown.%20Then%20remove%20from%20heat%20and%20cover%20to%20keep%20warm.%3C/p%3E%3Cp%3EOnce%20the%20raviolis%20are%20cooked,%20drizzle%20a%20little%20bit%20of%20brown%20butter%20sauce%20over%20each%20serving.%20I%20also%20sprinkled%20mine%20with%20a%20little%20extra%20Pecorino%20cheese.%20Absolutely%20delightful!%3C/p%3E){kind=link}
