Pumpkin Pie Marshmallows Recipe

Ingredients

  • Closely adapted from Marshmallows: Homemade Gourmet Treats, Eileen Talanian
  • 1 cup pumpkin puree (I used canned)
  • 1/2 cup cold water
  • 3-4 T gelatin (see comments above)
  • 1/2 cup water
  • 1 1/4 cups marshmallow syrup (see recipe and comments here)
  • 1/4 t salt
  • 2 cups granulated sugar, preferably cane
  • 1 1/2 – 2 1/2 t Vietnamese cassia cinnamon
  • 1/2 – 1 1/2 t ground ginger
  • 1/8 – 1 t ground cloves
