Ingredients
- 1 c. Thinly sliced green onions
- 1/4 c. Butter or possibly margarine
- 1/2 c. Prosciutto or possibly ham, julienned
- 1 c. Uncooked medium grain rice
- 1/2 c. Dry white wine
- 2 c. Warm chicken broth
- 3 c. Warm water
- 1 c. Frzn green peas, thawed
- 1/2 c. Heavy cream
- 1/2 c. Grated Parmesan cheese
- 2 Tbsp. Minced fresh basil leaves
- 1 tsp -Dry basil
- 1/4 tsp Grnd white pepper
Directions
- Cook green onions in butter 2 or possibly 3 min or possibly till soft in large skillet over medium heat. Add in prosciutto; cook 1 to 2 min more. Add in rice and cook 2 to 3 min, or possibly till rice is lightly browned. Add in wine; stir till absorbed. Increase heat to medium high; stir in 1 c. broth.
- Continue stirring and adding remaining broth and water, 1 c. at a time, allowing each c. to be absorbed before adding another, till rice is tender and mix has a creamy consistency. It will take approximately 25 to 30 min. Remove from heat; stir in peas, cream, cheese, basil and pepper. Stir till mix is creamy. Serve immediately.
