Potato Basil Fritatta

I love this recipe. It is easy and delicious and pretty fool-proof. I usually make it the night before so that all I need to do is bake it in the morning.

Ingredients

  • 8 T unsalted butter
  • 2 C peeled and diced potatoes (I use the frozen variety)
  • 8 extra-large eggs
  • 15 ounces ricotta cheese
  • 1/4 pd. Gruyere cheese, grated
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3/4 C chopped fresh basil
  • 1/3 C flour
  • 3/4 teaspoon baking powder

Directions

  1. Heat oven to 350 degrees.
  2. Melt 3 tablespoons butter in a pan over med-high heat. Add potatoes and fry till browned. Melt the remaining butter in a small dish.
  3. Whisk eggs and stir in cheeses, butter, salt, pepper and basil. Sprinkle in the flour and baking powder to incorporate.
  4. Place the browned potatoes into a pan and add the egg mixture on top. (I usually top with plastic wrap and place it in the fridge for the next day's breakfast).
  5. Bake the fritatta until it is browned and puffed (about 50 minutes to 1 hour).
  6. Serve hot or room temperature
