Ingredients

  • 1 can red kidney beans
  • 2 1/2 quart. water
  • 1 pound minced kale
  • 6 med. size potatoes, cubed
  • 2 fresh tomatoes, cut into quarters
  • 1 med. onion, whole
  • 1/2 pound linguica, cut into 1/2 inch rings
  • 2 heaping tbsp. vegetable shortening
  • 1 tbsp. salt of taste
  • 1 teaspoon crushed pepper
  • 1 tbsp. minced fennel (tuncho)

Directions

  1. Strain beans through food mill and add in to water. Place in a 4 to 6 qt pan and bring to a boil. Chop kale into small pcs and add in to water. Add in cubed potatoes, onion, Crisco, tomato and linguica, and allow to boil for about 25 min, before you shut off fire. Add in fennel. Makes 8 to 10 servings.
